Continuing with the Ninja Foodie Air Fry Oven:
 

Beef and Mushroom Meatloaf - I added shredded cheese and No Added Sugar BBQ Sauce: Air Bake @400F for 25 minutes. I used the broil function to brown the cheese on top.

Last night was Lamb Chops with Mint Parsley Pesto. I cooked them for 10 minutes instead of the 7 @400F as the chops were thick.  They turned out beautifully - tender and juicy.
Tater tots were cooked first, in air fryer basket.

I returned from my parents in the early afternoon with the little one … and my father, who will spend a few days with us while my mom gets better from her cold (it was her idea, to keep him & the little one entertained 😉) …

Tonight for dinner, Halibut with succotash and a herb / preserved lemon vinaigrette.

 

Based off a restaurant dish we just had but our own creation.

Return of the "casserole".    Green chili, chicken, pappardelle, sour cream, green enchilada sauce, Oaxacan cheese.    A delicious dive into last mid-Century.

I made a stir fry for dinner tonight.  Inspired by a member of a Facebook group I belong to. 

Chicken,(Chicken was sliced thin and marinated for 20 minutes with a little Shaoxing Wine, cornstarch, sesame oil and an egg white.)

 baby bok choy, red peppers, crimini mushrooms, celery, white onion, garlic, fresh ginger, a little chili garlic sauce and a splash of chicken broth.

Finished with chopped scallions.   Served with rice.

Had some leftover chicken so I made enchiladas

I've been craving oxtail ragu and oddly Ronnie found some in the freezer that I had forgotten about.  So, I dusted off the pasta maker.

Ronnie went out of town fishing and got back on Thursday evening.  I made venison meatloaf because it could keep warmish in the oven while he got here and settled in.  OH and I picked the first cucumbers from the garden.

Wow nice haul on the fish Ronnie!  Those bags look like lots of fillets. Do you separate them down to smaller portions before freezing? So envious. The pie!  The berries look intact with just enough crust - way I prefer. And the charred lemon - first had it where they cut in half and  charred to squeeze over fried artichoke hearts. I thought gimicky but in reality it added such a nice flavor.

Oh yeah, I put about 7 -10 filets in and vac packed them.

I preheat for about 25 min to min. 450 oC, measured at the left far corner of the Ooni. I then turn down the flames in order to avoid premature charring and cook in about 75 sec. …

Hahaha.  Maybe I should have said cauliflower cooked with shawarma style spices.  Anyway, it was tasty.

 

Yesterday we got the dreaded Acadian redfish in the fish share delivery, so after cutting out all the bony parts and stripping off the skin, I ground up the rest and made miniature Thai flavored fish cakes that we ate in lettuce wraps.  I also made rice and a smacked cucumber salad.  I added some bell peppers to the salad because I only had one cucumber for four people.

I got a fry mix to try it with chicken and catfish and decided to make hush puppies as well.  This is the third or fourth meal in a row with beans because the only size can they had was way bigger than I wanted. The chicken went in the oil and got browner than I expected almost immediately so I put it on a tray and moved it to the oven.  The fish got too brown too but it only took a few minutes.  I got nostalgic remembering the catfish and hushpuppies we had when we visited mom's friends and family in Arkansas.  Charlie is not a fish fan but he said it was good.   He liked the hushpuppies better though. I won't enjoy cleaning up the mess  I made and won't try that again in the summer time .

That looks so good! I'm sure I'd love broccolini, but I may as well ask for hen's teeth in my township!

To me it tastes more like gai lan which I love over broccoli. Though thinner so different texture but if you get to an Asian market i'd give it a go.
