Breakfast at a favorite place owned by HS friends of Jessica's.  It’s been around for many years serving just breakfast and lunch and has great “country” food.  Mr. Kim had the chicken fried steak and eggs:

Shakshuka from a base/sauce that I previously had frozen. Some extra feta and chilies. Eaten from the pan with some soft crisp bread, as one does.

Kale & Mushroom Pot Pie from Simply Julia.  Recipe available online here.  I made a half recipe in a smaller pan.  Kale-phobes could easily use a different, fairly sturdy green. Not baby spinach.

I liked the use of puff pastry shapes to make a pretty topping, roasting the mushroom and onions and the quick, flavorful "sauce" of sour cream, Boursin and black pepper.

I cured half a brisket for the last 2 weeks ... then cooked SV 36h @ 68 oC. Makes a very nice & tender corned beef, and a lot of it 🤗

Today, breakfast burrito with said corned beef, swiss cheese and a fluffy omelette.

Not sure if this counts as breakfast or lunch.  We ate at noon, but it was the first thing we had that morning.  @CantCookStillTry made sausage McMuffins the other night and I got a taste for one.  We only had one English muffin in the house (I can’t keep them long – I love them too much), so I made one sausage and egg muffin and one grilled sausage, egg, and cheese on bread.  I did the eggs in a ring:

When I made Shepherds Pie a couple of weeks ago, I froze two small casseroles, minus the potatoes.
This morning I pulled them out of the freezer.

@Ann_T – I never thought of doing individual Shepherd’s pies, but I have some of those lion’s head-type onion soup bowls stashed up in the attic and they would be so perfect!  Thanks for the idea.

Trader Joe's Organic Unsweetened Coconut Chips. They are a nice size and look pretty when toasted.

@Ann_T – that is one perfect looking poached egg.  And what is better than eggs on toast and SUCH toast🥰!
