This will be many lunch and dinners for the next week....

 

Lefse!

 

We make it every year, sometimes more then once.  We start with a 5lbs bag of Potatoes, use most of them and fill up the larger tray for our steam oven.

Rice them, add butter and cream.  then next day make big pile of Lefse :)

Christmas dinner a day later. Sous vide ribeye, bernaise sauce, sautéed onions and mushrooms, Hasselback potatoes. 
I had to cook part of the steak well for my mother. Seared it on the grill with the sear burner. A little past my preference but 🤷‍♀️. Wasn’t bad.

I love when you do one of your big posts.

 

Had planned on picking up Clams and Mussels and making a pasta for dinner. Unfortunately they were out of both so, change of plans.

Went with grilled rack of lamb.

Seasoned with salt, pepper, fresh garlic and rosemary and a drizzle of olive oil.

And I made Moe his favourite mint sauce made with chopped mint, honey, red wine vinegar and salt and pepper. I have a very happy husband.

@Shelby's prime rib has me salivating. We will have ours on Jan 1st, and hopefully, I'll get some semblance to hers!

And @Ann_Tperfect rack of lamb. hey never seem to go on sale, but I have been picking up chops on "markdown" at Safeway regularly. Have quite a stash and will need a feed soon!
Our family Christmas gatherings have changed so much over the last couple of years, Hard to get everyone together, especially now that one of our sons and family moved to St. John's, Nfld.

Our Christmas day sinner was at our eldest son's home. The in-laws were also present. The kids cooked a turkey, and I cooked up a ham, as my grandson is allergic to turkey and chicken. The sides were plentiful (made my Michael Symon's Holiday Brussel Sprouts),  and we had banana cream pie and melon meringue pie for dessert.

I made my annual Cranberry Apple Orange Pecan Chutney - great with ham, pork, chicken, toast;-)

 I kept the "bone" from the ham at home, and there was still lots of meat left for our supper tonight with scalloped taters I made . Hubby wanted apple sauce for his ham. I preferred the tang from the chutney.

Thanks Dejah,   I don't see lamb on sale here very often either.   I usually buy my meats at Thrifty because they have a butcher and a meat counter.   I splurged

when I saw the rack. It was on sale for $45 instead of $49.  But it didn't disappoint.   Was so good.

@Dejah I've never encountered melon meringue pie (unless a typo quirk for lemon) Was it melon and if so how used?

I wondered the exact same thing!  Typo?   But if there's a way to get melon into a pie, I wanna hear about it....

Xmas dinner with corn fed chicken, had a very similar dinner last night too with the left overs. Followed by a small cheese plate. Sadly didn't manage to get to our local cheese factor before Xmas so only four different cheeses, will visit them in the next few days to improve our variety as we do love a lazy cheese lunch or dinner when we're on holiday.

Hadn't planned on doing a turkey for Christmas. I like turkey, but much prefer chicken.
And since we have roast chicken on a regular basis, decided not to do one for Christmas and went with prime rib instead.
 
Our grocery store had fresh organic turkeys on sale on Monday and they had small turkeys still available so I couldn't resist.
They had two different brands available so I bought one of each. Both weighed 4.660k (10lbs) and one was $10 and the other was $15.00.
Before Christmas these turkeys were selling for over $50 each.

Thanks alot. I have tons of leftovers, but i just thawed out some ground beef for chili. As if i need more leftovers because, who just makes enough chili for a bowl or two.

Guerrilla Tacos continues to be an excellent cookbook - eggplant taco (oven roasted and afterwards seared japanese eggplant) with halloumi cheese, roasted tomato salsa (tomatoes grilled until they are black with jalapeño, grilled onions, garlic and vinegar), toasted hazelnuts, parsley and some lemon juice.

@CookBot, @Shelby @heidih: Yes. sorry...brain fart that affected my fingers: too much sugar, carbs, EVERYTHING!
Sorry to disappointed, but it WAS indeed LEMON Meringue pie 😏


Post Christmas fatigue, so supper was curry stir-fry:skinny end trimmed from a tenderloin prepped for Jan 1, bell peppers, onion, and curry powder, with Basmati rice.

I love how the stuffing is actual bite-size pieces of bread instead of small bits. Great for sopping up the gravy! Delicious!
