 local meat packer has 2/pk pork tenderloins on sale for $5.00. The package I cooked last night was 36 oz: supper last night and lunches today.
A friend has a cottage in northern Manitoba and they just picked up a container of new harvest of wild rice.
So supper was rosemary marinated and grilled pork tenderloin, cranberry, wild rice, and barley pilaf, and a pile of mixed veg.

Yesterday was my birthday (#71) and we had reservations for dinner at a nice restaurant.  As the day progressed, and the energy levels dropped,  we decided to hang at the house and have a light supper.   I ended up preparing a simple salad with hoikkado scallops piccata.  Dessert was a flourless chocolate tart from Publix that was very good.   We also had a scoop (or two) of B&J Pistachio Pistachio ice cream since we were celebrating.

Happy Birthday, @Steve Irby. I'm 77. My last few birthdays have been similar. I think about going out, but often end up staying home. There's a local bakery that has a chocolate cake I really like. My husband often buys a couple of slices and that's my party. The last time I actually celebrated was for my 70th. We had a party at the family beach house. Of note was great October weather, a lovely apple pie my SIL baked that had a "77" formed in crust. People stayed overnight and breakfast was leftover oysters and key lime pie. My nephew had never had oysters and he was over the moon, which was hilarious. But the  real moment of awe came when a red fox was spotted across the street during breakfast. We're talking about a funky little beach town and a funky beach house with a view of the ocean. In all my nearly fifty years of marrying into this beach house this fox was a one-time only event. Deer always. Wild turkeys wandering about the streets,  especially the day after Thanksgiving, just to prove they are still alive.  But a fox? I'm guessing never again. This year my birthday will be singularly weird. I will be on the tail end of chemo.  All bets are off whether or not a slice of chocolate cake will look good.

Monday's dinner was seared tuna with soy sipping sauce, rice, and a salad of lettuce and peppers, which were the only vegetables n the fridge.

Inspired by the comments about Picalilli, I made some this morning! But the recipe said wait for a month before consuming!
I licked the spoon and it was good.

During the fall and Winter , I sometimes augment Progresso Soups.

 

My favorite is Italian Wedding , and when it goes on sale , I stock up :  '  less salt ' version of course .

I added granulated garlic and onion , a couple of fz pucks of Dorot basil ,  a little bit of dried rosemary

 

and thyme .   I let that blend on low heat for a bit , then off the heat

 

two beaten eggs , some chopped spinach , and 3 Campari's , chopped , that were looking for a home .

 

I was going to add some grated cheese , thought better of it , and made an AirFrier Naan-ish cheese  toastie.

 

from Fz , light coating of EVOO // Fontina , then AF'd until it looks like the above .

 

very very nice the whole things was , and all be having it from time to time again.

 

surprisingly  good , for such an effort .

Spiced Turkey Burger with Mango Chutney from an ATK recipe - patty is made with ground turkey, melted butter, worcestershire sauce, garam masala and cayenne pepper. Fresh Turmeric and Peppercorn Curry with Shrimp and Asparagus from Comfort by Ottolenghi - first you prepare the curry base by pureeing reconstituted dried red chilies, toasted white peppercorns and coriander seeds, shallots, garlic, fresh turmeric and cilantro stems. Then the paste gets roasted in coconut cream until nicely browned. Once done, you add coconut milk, light brown sugar and fish sauce and subsequently quickly cook asparagus, asparagus tips and shrimps. My dear sis and BIL are going out of town week after next. I went over to Topeka yesterday afternoon to get the lay of the land so I'll be able to go a couple of time while they are gone to replenish cat food, bird food, water the garden, etc. Then we all drove back to Lawrence, KS for a quick bite to eat before I headed back home. None of us had been to Fork & Tumbler but it had popped up on Facebook so we decided to give it a try. The website and FB page looked really great. It was not all that. We shared some of the small plates, which turned out to be enormous. We had the Fried bread with whipped cheese, Meatballs, Stuffed Squash Blossoms & Brussels and Crab Cakes. The bread/cheese  and meatballs were good but everything really was just so-so. We won't be going back. Nothing ventured, nothing gained.

 

We all have many leftovers. And I picked a few tomatoes at their house, so that's a good thing!!

after starting the Soup Season w Italian Wedding ( w amendments )

 

I looked into my favorite soup :  Bean w Bacon . 

 

unfortunately , the lower salt version ( Heart Healthy ) seems to have disappeared in my area

I pulled out some Benton's bacon.  if you like mail order country bacon , its one of the best .  hickory and aged funkiness .

 

I vac and freeze the stuff as its used as a garnish

I decided to soak the amount I planned to use in ice water , 30 min by the Thermoworks ( Red ! ) 4 channel timer on the refig.

 

otherwise , id use less time .  trying , even in facade , to reduce the sodium by a little bit .  all I know is the sodium didnt increase.

I pan saute on very low , so as not to burn.  they were crispier than this .  p 30 min soak , still lots of hickory flavor.

I use 1/2 can of water , and hand mash the bean soup to get a creamy consistency .   granulated garlic and SpiceTrekkers 

 

Spanish smoked paprika, its flaked , not powde .  I lived in Spain and these are Spanish flavors I love.  some window green

 

onions and a pat of butter.

 

I took a Tj's Fz naan-ish , used a little butter , some granulated garlic and onion and AF'd.  needed a minute more.

 

and yes , that's  Tj's Coastal Chardonnay ( w Ice ! ) .

 

superb this was.

 

P.S.:  Tj's has garlic Naan-ish   but its quite overpowering if you are looking for something a bit more sedate.

Fresh, wild king salmon slow-roasted in the CSO, after a full day of salting, basmati rice pilaf, sauté of corn, zucchini, onion, tomato.  The spice I sprinkled on top of the salmon prior to roasting is from La Boîte: Lula (seaweed, fennel, and coriander).
