Hello @Pete FredWould you mind saying what pastry you used. It looks very good. Reminds me of a pate sablee but of course I know that is a sweet pastry and wouldn’t go with an onion tart.

It's based on Pierre Hermé's pâte brisée. In his English translations it's often called his Perfect Pie/Tart Dough.

 

For a 22cm/9-inch ring I use: 130g butter, 3g salt, 3g sugar, 25g milk, 15g egg yolk, 175g plain flour.

 

You can use his method in the linked recipe, but I tend to rub the butter into the flour then work in the milk/egg until smooth. I don't notice a difference.

 

The texture of the cooked dough is delightful; delicate and melting on the tongue. I'm not sure that another picture helps much, but who here doesn't like looking at tarts...

@Pete Fred Thank you so much for that recipe and the method you use. I see you do include a little sugar even though a savoury filling. The texture does indeed look ‘delightful’

I view it more as an aid to browning rather than seasoning. I don't bother weighing it, just a generous four-finger-pinch, so it's probably a touch more.

I was not hungry in the least and just couldn't interest myself in making much. I found a twice baked potato in the freezer and a piece of flatbread I didn't use last night. Baked the spud in the toaster oven and smeared the bread with a little peach butter, sprinkled some crumbled bacon on and stuck in the toaster oven, too. I need to remember the peach butter and bacon combo--it was very good.

Tuesday night's dinner.

Everything done on the grill so I didn't have to turn on the oven or the stove.
Filet Mignon cooked on the grill along with the zucchini. The potatoes were roasted in a cast iron skillet on the grill and the mushrooms were also cooked in a cast iron skillet.

Lemon chicken. Not "Chinese Lemon Chicken", a dish which I've never encountered in China - that is American.

 

I marinated a cubed chicken breast in lemon juice and zest, garlic, and chilli for about two hours. This I then stir-fried, adding some Spanish black olives, Shaoxing wine and salt. Finished with some cilantro and culantro to wilt in the residual heat. Served with rice.

 

Normally, I would use dark leg meat, but a breast was what I had.

Another one meal day. This was easy and quick. Sesame ginger dressing on the cole slaw and Aldi's Korean BBQ sauce on the egg rolls. Egg rolls heated in the toaster oven.

Not much to see but a tasty shrimp quesadilla with diced shrimps, roasted red peppers, scallions, monterey jacks cheese, lime zest and juice, cilantro and Old Bay seasoning in a pan-fried flour tortilla

Steamed shrimp with garlic, soy sauce, oyster sauce, sesame oil, white pepper, and scallions

Quick “chicken curry” with diced chicken breast, red pepper, snow peas, mushrooms, cilantro, curry powder, coconut milk, chicken broth and served with freshly made cauliflower “rice”

I was planning to cook a brisket in the smoker on Sunday to have it ready for Monday.  But 6 weeks ago my sister invited us to a backyard BBQ on that day.  I suspected she was planning a surprize birthday party because it is the day before my birthday.  She kind of clinched the hunch when she called yesterday and asked what was my favorite cake and icing. So what happened is I cooked the brisket yesterday, sliced and reheated it today and we had some along with some sides.

Roast lamb early dinner. Meat and 6 vegetables plus herbs in the stuffing… we love our vegetables. Mint sauce and of course … gravy

I have been working on this dish :   Sardines w spinach salad topping  lets call it

on this version I added TJ's balsamic glaze on the tomatoes .  the bottle was right in front of me 

 

this didn't work .  the glaze is tart , which alone might have worked , but also sweet.  sweet didn't wowrk

this is the current spinach concoction :  thinly sliced  spinach , kimchi , saurkraut , green windows onion and red onion.  

 

w some mayo to make it creamy .  Ive been adding more of this lately , on top of the canned TJ's sardines

mini shredded wheat .  Ive been using more of this also .  and I started to re-shread the S.W.  

 

as there wasn't enough auto re-shredded on the bottom of the bag .  realized  didn't have to be completely shredded.

 

nice dish   cold.  tomatoes are room temp.   the rest cold from the refrigerator , including the plate.

Hosted neighbors over for dinner. Pics are this morning's leftovers, so you will just have to take my word that everything looked better yesterday. 😉

 

Mrs. C made a delicious sockeye salmon with dill dressing.

Seared scallops and dry-fried mushrooms with mashed sweet potato and a rosemary port-cream pan sauce. Mrs. C requested that we add this to our holiday meal.

Beet salad (from neighbors) and a delicious salad of avocado, tomato, corn, shallots, etc. (from Mrs. C). When Russians offer anything with beets, I suggest saying “Yes, please.”

Eggplant curry with coconut milk, tamarind, shallots, garlic, green bird chiles, turmeric, and a spice mix of coriander, cayenne, cumin, fennel, and cinnamon stick. I seem to be the only one who likes this, but I like it very much.

Peach and mango crisp, also by Mrs. C. No added sugar, and the topping was particularly good.

Pizza & movie night …

 

Deviating from our routine little one requested Pizza Hawaii, made with fresh pineapple and smoked bacon. Very good …

I think a pizza Hawaii  if a fine pizza 

 

with proper ingredients :  you've got it right :  smacked bacon m and ripe pineapple 

 

never made a Pear and Bleu ?  ( Crumbly Bleu or many be feta ?)

 

neither have I .  but I can imagine it , noting the salt content of the crumbly bleu or feat .

 

and you wouldn't peal the pear , of course.
