Moroccan Eggplant Salad from Dinner in French - pan-fried eggplant slices topped with a “ragu” made from oven-roasted yellow peppers, tomatoes, parsley, garlic, paprika, cumin and preserved lemon. Everything was topped with plenty of cilantro and mint as well as some lemon juice and olive oil. And served with some wiener wuerstchen

I've made this dessert many times over the last 20 years or so, since my friend Nigel showed me. The very first time, he mentioned adding cinnamon, but added, "That's an English thing."

Last night I added a sprinkling of cinnamon. What can I say? It was the best I've ever made.

Coming next: carbonara with cream?

Another dinner, another plate of grilled sausage and white beans (alubias).  

 

This is lamb sausage; I mixed a bit of jarred chimichurri into the beans to marinate.  I grilled some lemon wedges to wake up the beans at serving time.

I got a head start on dinner yesterday morning. I decided to make my meatloaf. It is the only meatloaf that I like.
Meatloaf is something I would never eat.
Just hated the idea of meatloaf because almost every meatloaf used ketchup or some other tomato sauce and it just never appealed to me.
 
Back in the late 90's we were in Charleston, SC and we had lunch at Magnolias.
They had a meatloaf on the menu that was made from veal, grilled served with a light gravy/sauce.
This was a meatloaf that actually appealed to me. It was so good that once we got home, I made my own version as best as I could remember.
Over the years, it has been difficult to find ground veal so I switched to using ground pork.

Still re-energizing after the Xmas festivities followed by friends making their annual visits!

Made Thai Herb Salmon Baked in Foil for guests for supper. Sides were Green Beans Almondine, Jasmine Rice and Nasi Lamak. Made trifle for dessert.

Always keep Costco Weiners in the freezer. Great when I am tired of cooking! Cavendish Fries and bag of chopped salad = supper!

 Had a Butterball Turkey Breast in the freezer that didn't get used over the holidays. Used a box of Stove Top stuffing for the 1st time. Better when oit was dried out a bit next day! LOL!  Leftover turkey for sandwiches for 2 days.

Stir-friebd Udon noodles with siu choy, shirataki mushrooms, rehydrated shrimp, and char siu, in oyster sauce.

Picked up a small pork blade roast. Seasoned with West African Citrus Spices. Made delicious gravy!

Love your cooking @Dejah always so tasty looking. I was wondering what is the white creamy looking food on what I think are potatoes in the photo of the small pork blade roast?

After watching 'Landman' I have been craving Mexican food. So, chileatole rojo de pollo with potato, zucchini, and shiitake mushrooms.

 

The broth was sauteed white onion and garlic, blended with ancho chile powder, masa harina, and chicken stock. Would have been better with epazote but none at the international market so I used a few sprigs of flat-leaf parsley. Topped with feta cheese.

It's sour cream.

Had evening garden club meeting and I am on lunch / coffee committee. So it was early supper:
Deluxe Wonton Soup, with Siu Choy, Char Siu, and shrimp plus noodles.

Lamb kofta with saag: Saute chopped onion and sliced garlic, fry with cumin seed, black mustard seed, turmeric, and ground coriander, and then simmer with chicken stock. Make lamb meatballs with salt and pepper, then fry. Simmer meatballs, spinach, and cilantro in the soup until done. Pilaf-style cumin rice with black cardamom, bay leaves, and cinnamon stick to go with.

 

Mrs. C said it was the best Italian wedding soup she ever had. 😆

 

This was a new cookbook, a gift from a friend. Lets just say it needs editing. The soup was supposed to include potatoes, but none were listed in the ingredients so I didn't get any. After frying the onion and garlic, it says to remove half, but never tells you what to do with them (I added back into the soup, but maybe it was supposed to go in the meatballs). Coconut milk "if needed" is listed in the ingredients, but never mentioned again. Etc, etc. Glad this was not my first time cooking Indian food.

I could have written this myself! Maybe once a year I think "I'll make a meatloaf" and it never has ketchup!. Eat one piece and done.

@Ann_T Im going to try your meatloaf recipe and I can honestly say that I am looking forward to it!

Of course it’s sour cream @Dejah. We don’t use sour cream very often so couldn’t think of it . 
 

Our dinner was pork chop with nuked potato, corn and salad

@YvetteMT, I hope you like it.  Nice to see that I'm not the only one that really hates ketchup.  it is only used in our house for one thing and 

that  is for the Tunnel BBQ sauce.

 

Moe had a meatloaf sandwich for dinner last night on a baguette.

Before leaving for work yesterday morning I made my pastry so I could bake an apple pie.

I too detest commercial ketchup and never keep it in the house. But for frosting a meatloaf I suggest a homemade ketchup with an addition of spicy smoky BBQ sauce. It's made with canned Italian tomatoes but tastes nothing like traditional ketchup. I almost never eat beef any more, so I haven't made meatloaf in years. I also used an equal mix of beef, pork and veal back in the day.

 

And speaking of NOT ketchup, I like my french fries with aioli and smoked paprika.
