An Instant Pot baked egg with spinach & mushrooms.  The method was inspired by a couple of recipes in Melissa Clark's Instant Pot cookbook, Dinner in an Instant.

The ingredients were inspired by leftovers xD

We went to the Rincon center branch of Yank Sing for dim sum yesterday.

If you've never been there, it's a restaurant located in the food court section of Rincon Center. Their main location is at Stevenson Street.

There were so many people there just for the dim sum service that tables were set up outside of the restaurant in the court itself.

At right is their "to-go" restaurant.

We had:

Braised chicken feet

Not as good as previous versions I've had. They were covered in a sweet gloppy sauce...disappointing.

We missed the Peking duck cart too. Oh well.

Total bill came out to $200 for four people. There were some other things ordered not shown - melon balls, egg tarts, mango pudding.

Yesterday, Deb texted me that she would be "stopping by" Kohl's on the way home from work. Because it turned into an hour and a half visit, I had 2 extra baked potatoes this morning. So, I put one in the fridge, cut the other one in half, covered it with shredded sharp cheddar cheese and heated it up for this.

Two lovely eggs from the farmers market  and a slice of rustic country bread from a local business that grows and grinds their own grain and bakes it into bread.

Should be perfection, no?

No.   One yolk willfully decided to swim away from its white.  Or vice versa. Ah well. Still delicious.

I usually don't eat breakfast, but credit to all you enablers I ordered the Eggs Benedict at the airport lounge this morning. Very good and very dangerous ... this could be habit-forming :$

Chunky, VERY spicy vegetable soup. It’s what’s for breakfast on fridge muckout day.  No point in wasting that little bit of very funky kimchi hiding back there.xD

Toasted French baguette, topped with mortadella, back under the broiler, then a layer of sautéed sweet peppers and a bit of garlic, topped with brie and broiled a bit longer.
