Vegetable and Broken Spaghetti Soup: Made enough for a few days. Did a little fridge cleaning as well. Green beans, onion, carrot, red bell pepper, sautéed in Calabrian pepper oil, plus the addition of zucchini, a small can of diced fire roasted tomatoes, and broken whole wheat spaghetti. Slightly under cooked to account for subsequent reheating. During the following days, various proteins will be added to round out the meals ... glorified leftovers!

Spring is happy time. One of the very early harvests from the garden is hosta. Tender, delicious shoots, with shrimps.

First night at home after a week of business travels with restaurant food. Needed to cook something “homey” - and family requested pasta. Soooo … bronze cut spaghetti from Rummo. Sauce made from enough garlic to depopulate the night-active part of Transylvania, white wine, passata, anchovy, squid, clams and shrimp. Parsley. Served with a Valpolicella Ripasso …

Got a head start on tonight's dinner.
But got started late.
Decided at 7:30AM to make the pasta dough and put a pot of Bolognese on to simmer.

A short visit down to Victoria to see friends and brought back a couple of Caribbean pork rotis from Trini 2 D Bone. My friend also got chicken and goat. 

We had ours with a side salad and some commercial chutney. I still have mango chunks in the freezer, should get back to making some of my own!

With little one on a sleep-over DW requested some “Italian nibbles” for a light dinner …


To start: Negroni for the cook …

It was a bit late to start the dough for a rosemary focaccia, so I decided for a scarpaccia instead. Thinly sliced zucchini & onions are salted, the resulting liquid is blended together with a bit of milk, olive oil, flour and fine polenta into a dough and spread onto a generously oiled baking try, topped with rosemary and baked for about 30 min …

The works: scarpaccia di zucchine (Tuscan zucchini cake), marinated champignons and olives, roasted peppers with anchovy, cod roe with capers & garlic, heirloom tomatoes with buffalo mozzarella, baked provolone, fried squid and shrimp with allioli and a nice Primitivo.

And some not soooo Italian churros (commercial product with excellent results in the airfryer) with chocolate sauce to finish …

All enjoyed while watching “The Northman”. And no complaints (except for that lame movie 🙄) …

Ive started using one beaten egg on the hot linguini ( I use two w the fresh tomato linguini ) a la Carbonara.  I add it to the hot linguini after a little bit of EVOO and butter .  So have , it hasn't scrambled and add a silkiness to the linguini :

Ragu side of the dish.   the EVOO//Butter//beaten egg    adds fine flavor, richness and mouth feel , if you will ,to the Linguini.

I havent had beef in a while.

 

RocheBro , a local family owned chain , has a very good service meat counter w very good beef.

 

you get the exact amount of ground beef you want.  

 

Burger 20/80   ( Chuck )   hot saute w a little Penzeys Chicago Steak seasoning .  RBro's cole slaw  good stuff

deglazed w a little butter.

 

very very tasty .  One thing about beef fat  (  trending now as tallow ) it has staying power.

Yesterday we had a ham dinner. No occasion, just that Charlie said a few days ago that he'd like to have ham sometime soon.   A couple days ago, Walmart had some Frick's bone in ham and they are always good City hams and cheap too so that is what we had.

 

Today we went to an Italian restaurant in Overland Park for lunch then went to the Korean market in the same mall and got  stuff for dinner tonight.  Charlie got some side dishes:  a tofu dish called dubujolim, japchae, fishcake, kimche, and some other stuff not for dinner tonight. I got some  thin sliced pork shoulder, bok choy, snap peas, shitake mushrooms and rice.  I made bulgogi with the pork and cooked the vegetables separately in sesame oil and salt and pepper, then combined them to heat through and served in one bowl.  We had so much food that we each needed two plates for everything.

Pizza with Prosciutto and Brussels Sprouts - quick two hour dough with tipo 00 flour and some olive oil. Tomato sauce made from tomato passata with garlic quickly cooked down to the right consistency. Pizza topped with thinly sliced brussels sprouts, fresno chile, mozzarella and parmesan and after cooking in the oven with some prosciutto and olive oil

Got some nice Italian salsiccia, that I wanted to feature on our Sunday night pizza. Unfortunately, I realized yesterday night that I was out of yeast for the preferment 🙄

 

So, instead orecchiette con broccoli e salsiccia … not a bad alternative.
