Sweet Potato Moussaka - plating definitely needs much more work but this recipe from “essen & trinken” was as good as always. They tend to produce creative dishes on level with upscale restaurants.

Here you make a few things in parallel to assemble later - roast red and yellow peppers under the grill until black and remove skin to create a nice smoky flavor. Cut sweet potatoes in thin slices and pre-bake in the oven with olive oil. The ragu is made with ground lamb, onions, garlic, tomato passata, thyme, parsley, 5-spice powder and chile flakes. Spinach is quickly sautéed with onions and garlic and squeeze dry. And finally one makes a nutmeg heavy béchamel sauce. Once you assemble everything you top it with a mix of feta, egg yolk and heavy cream before baking it in the oven

A drastically out of season "BLT" and corn (BLO for him,  BLOAT- bacon, lettuce, onion,  avocado, tomato for me). He requested BLTs and since I rarely get requests...

In recovery mode from this terrible virus circulating. Coughing was so bad I developed massive bruising on my left groin. 2.5 weeks and finally, getting some rest at nights with Musinex. Had no energy but was still hungry, and still had to feed hubby who doesn't cook 😉
Breakfast for supper: Buttermilk waffles, eggs, bacon

Picked up a big chunk of beef liver a while back. Had one meal left in the freezer. I cut the slabs 1" thick, marinated in milk, then coated with bread crumbs. It was very tender.

Leftover Paella augmented with pan-seared scallops. We enjoyed the Lemon Garlic Butter on the scallops.

And finally, fresh halibut! Pan seared with the same Lemon Garlic Butter, asparagus, sweet tater fries ( Cavendish), and a couple of pieces of pickled beets.

Chicken Vindaloo. according to the recipe introduction, is a spicy curry dish that was originally a Portuguese dish of spicy pork but you can use any meat you wish. The curry was not a pre-made mix but made from scratch and had a subtle curry flavor, IMHO.  I made banana nut bread for dessert

@Dejah  You are a rock star to be feeling so horribly and still cooking all that delicious looking food!

Tried some grain free lower carb taco shells--not bad tasting but the texture was .....difficult.  When you took a bite it was crunchy for like half a second and then it turned mushy.  Like cereal after you pour milk over--I like it crunchy, not mushy lol.

I always check out the big portobello mushroom caps at Dillions.  They are ridiculously expensive but then no one buys them so they put them on sale for like 2 dollars for a package of 3 huge caps.  These I stuffed with a mixture of egg, spinach, seasoning and cheese.

Salad and SV'd steak to go with.

The last of the quail in the freezer.  Ronnie wanted it fried again.  Breakthrough on the gravy front.  I used xanthan gum and made a cream gravy--carb free and it tasted excellent!!!  Mashed cauliflower "potatoes" to go with.

Not my cooking but still this was a dinner we had

Bought fish and chips. There‘s battered flake, a battered potato cake, chips/fries a dollop of sate sauce and a dollop of mixed ketchup and BBQ sauce. The big white ball is a pickled onion traditional for this meal

A Very Simple Dinner

To my homemade vegetable stock I added some finely diced vegetables: leek, carrot, zucchini, yellow squash, orange bell pepper, bok choy, a small handful of frozen, mixed veggies, and a few scoops of leftover basmati rice along with some Korean pepper flakes.

Remembered I had 2 bags of this in my pantry, from Sonoko Sakai:

So I made a full batch of curry roux bricks. Which allowed me to make:

Pork curry rice.  Pork shoulder, red bell peppers, onion, ginger, garlic, Korean sweet potato, carrots, house-made dashi, curry roux.

Over koshihikari 100% milled white rice from TRF.

This looks incredible! Could you please elucidate the details of the recipe? I tried googling "essen & trinken" and was not successful.

Edited to add: I have found the original German recipe and have engaged google's sometimes peculiar translating services.
PM me if you want English version

I didn't find the right recipe. Could you please post a link?

Taco truck tacos! Chorizo, al pastor, and carne asada for me. Mrs. C skipped the carne asada. Both with guacamole. Generously filled and topped

Where might that lovely truck be found?  During our years living in the district, I often found great trucks in the strangest places.  I think I remember one parked in the parking lot of The football stadium, but not on a game day. At the time, I think it was called FedEx Field.

Gas station parking lot, of course.

Gas station is located next to a Latino market, which seems like good marketing.

Spelt Bowl with Green Vegetables and Parsley Hummus - spelt (soaked overnight and then cooked) was the base for this bowl. Toppings were parsley hummus (quickly blanched parsley pureed with chickpeas, lime zest and juice, tahini, garlic, yoghurt and olive oil), romanesco (blanched), napa cabbage (raw), edamame, red onions, cilantro, avocado, toasted sesame seeds with a vinaigrette made from olive oil, sesame seed oil and lime juice
