Ground Beef and Cheese Enchiladas - corn tortillas are filled with a mix of ground beef, Monterey Jack cheese, onions, garlic, cilantro, cumin, coriander and some of the sauce. The sauce is made by pureeing rehydrated ancho chilies, chipotle in adobo, onions, garlic, tomato paste and cumin in beef broth. A couple of recent quick dinners.

Shrimp roe noodles, shrimp and freezer sugar snap peas pan fried with chili oil, garlic and ginger.

Homemade cretons on toasted baguette with mustard and green tomato chowchow. Avocado and mixed greens salad on the side.

I'm surprised I'm not waking up in Texas this morning.  We had 60 mph+ winds ALL night out of the north.  When it calms down I'm going to go outside and beat my wind chime to death because it's driving me crazy.  

 

On to the food:

 

Oyster stew and salad.  I need to stock up on frozen containers of oysters--those come in handy

That same night, because I had some extra time, I experimented and made a "pizza crust" out of cottage cheese and eggs.  If I recall the ratio was a cup of 4% fat cottage cheese and two eggs.  I seasoned with Italian seasoning and added some grated parm.  I had to bake it for much longer than the recipe said.  It was.....meh.  But, hey, I tried lol.

SV'd steak--really tender, creamed spinach and the most awful cauliflower "risotto" that I found in the frozen section at the store.  That went right in the trash.

For the first time in a zillion years I didn't plan anything for Fat Tuesday dinner.  I don't know exactly why except the weather has been a hinderance in getting deliveries (I'd have loved to have gotten a muffuletta sandwich from Central Grocery)...but also the carb thing comes into play too.  Sigh.  So,  I thawed out the last of the oysters.  Made a salad with some diced salami and a few croutons as an homage to the muffuletta.  Sautéed some peppers and onions along with jalapeno cheese sausages.  Did some deviled eggs.  AND the splurge was a tiny pan of cinnamon rolls--it's not King Cake but close enough.  The rolls were done in the little 6" pan that I got for the IP.  I've been craving cinnamon rolls and if I made the usual big pan we'd have eaten waaaaaaay too many of them.

We served dinner guests a lovely meal, and I had very little to do except eat. 😉

 

House guest made halibut cheeks and blackened salmon salad with beets, berries, and nuts. She also made the halibut cheeks for our holiday meal, and we liked it so much we requested a repeat.

 

Mrs. C made sourdough bread. All I contributed was cucumber salad.

Flour bakery's recipe for fluffy baked eggs on a sandwich with chipotle aioli, bacon, and arugula.  Some fries baked in the bacon fat in the background.

Lamb Ragu two ways over two nights. First night, with sweet potato.

泡椒牛肉虾仁炒饭 (pào jiāo niú ròu xiā rén chǎo fàn), pickled green and chillies, beef, shrimp fried rice.

 

The pickles are HOT. Although pickles in general and particularly, pickled chillies are widespread, Guangxi and so Liuzhou loves its pickled chillies.  And so do I. I also threw in egg, garlic chives, peas and carrots.

I'm going to horrify many of you with this. I had not had a fried Spam sandwich in decades, but suddenly had a craving so indulged myself. I have leftovers.

Fresh Campari tomatoes , w Basil/Garlic oil ,  finely diced Parmesan-ish ,  FastaPasta linguini :

Tj's Campari tomatoes , seeded , sliced into ~ 1 " chunks , Penzey's Tuscan seasoning blend .  the tomatoes sit w the seasoning , so it hydrates.

 

I kept the seeded juice .  Ive seen seeding the Campari's for my Naan-ish pizza , which works better as w/o doing this the pizza might be a bit 

 

soggy .  decided to do that here , and reserve the juice to add to  the hot pasta , in place of the usual  pasta water .  EVOO ( one of TJ's )  

 

w one unit of Dorot's Fz basil , and a bit of Dorot's Fz garlic.   the basil and garlic are not cooked.  thawed and mixed only  .  Window green onions .

13 minutes in the Micro , drained .  plated , the the juice , the EVOO/Basil/Garlic , then the tomatoes , the diced cheese , and green onion.

this was outstanding .  

 

I used to my the same sort of dish , all summer long when I grew my own tomatoes , generally Early Girls.

 

this was so close to that dish , as the Campari tomatoes were very nice , and I generally keep two packs on the counter for several days

 

until I use them  .  makes a difference .   I buy based on color , the red-er ones are better , understanding they are bred for color ,

 

but the deeper the red , the longer on the vine.  these are not the same as a perfectly ripe Early Girl , still warm from the garden

 

but quite close .  Ill be having this often , as long as the Campari's are up to the challenge .

 

Fresh , Simple , a bit of Spring , right on the plate.
