Last night's dinner.

Roasted a small chicken

and served with fries and TBQ sauce.

 

I recently bought another CSO that I found listed on our local FB Marketplace.

I bought to have at work.  Should have done this years ago. 

 

Roasted the chicken at work so only had to make the fries when I got home.

Neither my niece or I enjoy turkey, so on Friday while everyone else was enjoying the Thanksgiving leftovers, we had salmon lettuce cups with rice and cucumber salad

 

 

Last night my nephew cooked for us.  He made a butter chicken with maharajah rice and paratha

Chicken, black boletes and gingko nuts. With rice.

 

The chicken was marinated overnight with Shaoxing wine and Chaoshan fish sauce, garlic and chilli.

Orecchiette with a creamy tomato sauce, a little bit of spicy chicken sausage, and basil.

Lamb Tagine - made with cubed lamb shoulder, green beans, carrots, tomatoes, onions, garlic, turmeric, caraway and hot paprika. Served over couscous and topped with yoghurt with fresh mint

Jerk chicken wings with a tomato, mandarin and arugula salad, coleslaw and pickled zucchini ribbons.

Grilled thick pork chop with roasted baby potatoes.

Fettuccine with Mushrooms, Mint and Chili Oil from Back Pocket Pasta - Mix of mushrooms (portobello, king oyster, shiitake, oyster) and thyme gets sautéed before adding and cooking down red wine and finishing with parsley, mint, egg yolks and chili oil. Served with fettuccine

Gong bao chicken with cashews; roasted acorn squash glazed with maple syrup, ginger, and butter; and roasted potatoes. The squash was ridiculously yum for how easy to make.

Penne and pesto, after non stop salads the last few days it was a relief to have some pasta.

sliced boneless pork chops with Calabrian chili sauce ( homemade chicken stock, garlic, parsley, butter and jarred Calabrian chili) and salad
