An experimental breakfast.

 

What is great for breakfast? Bacon and eggs, of course.So that's what I made. Sort of.

Bacon and egg sort of ramen. The broth is dashi with a little red miso, garlic and dried 'tribute fish'*. Crisped up some bacon, soft-boiled an egg and chopped some Welsh onion. Fresh ramen took three minutes to cook, so I threw in the pre-cooked bacon, eggs and onion when there was still a minute to go.

 

I really liked the bacon alongside the seafood flavors.

* Tribute fish is a direct translation of the Chinese. There are many tribute foods supposedly because they were prized gifts to be sent to the emperors. They (the fish; not the emperors) are tiny - 5cm/2 inches long at most. Nearly always sold dried. Great for adding umami.

Hot egg salad on Jessica's Tuscan wheat bread.

Hot egg salad: hot hard boiled eggs, melted butter, salt and pepper.

 

Note to self: in future, cut hard boiled eggs in half before microwaving.

Fast forward to the last meals, between the earthquakes.

 

First time trying donkey milk yogurt. Super creamy and rich but no distinct "donkey" taste, surprisingly.

Cretan white grapes (and other fruits) are sweet like honey. The white grapes we get from S.Africa are tooth enamel destroying super sour water bombs.

@BonVivantI had the best yogurt of my life in Crete. We were just aimlessly walking and came on a little store that appeared to sell nothing but. We tried to find it again the next day and couldn't. Donkey yogurt it wasn't. At least I hope not. Your food for the trip looks great, and I can tell you are glad to be back on solid ground.

In a Marlena de Blasi book about Umbria she brings up a woman's "time of month" remedy and skincare routine. Soak 2 trenchers of bread in ass's milk and lay between breasts and stay in bed for 24 hours. Seriously!  So that cheese seemed in line.

Moe and I both had ham sandwiches on baguette late morning.
The remaining ham is destined for fried ham and eggs, fried ham and toasted tomato sandwiches,
possible crepes with ham and mushrooms in a cream sauce and the bone will be going into a pot of navy bean soup.

Masala Beans on Fire Toast from Dishoom

These are supposed to be tarted up Heinz tinned beans.  I've got too many dried beans around to go out and buy canned so I used a copycat recipe to make some from Rancho Gordo yellow eyes.  Obviously not the right kind of bean but the end result was fine.  The beans get heated with an onion-tomato masala, gram masala, chopped green chili and cilantro and spooned on buttered "fire toast" which is just toast made on grill pan.

Parsi Omelette, Gunpowder Potatoes and Tomato Chilli Jam, all from Dishoom

The jam is delicious but turned out to be too sweet here so after a taste or two, I switched it out for tomato chutney.

Nankhatai and Masala Chai from Dishoom

The Nankhatai are buttery, shortbread-like biscuits made with a mix of flours:  wheat, chickpea and semolina, that gives them a crunchy texture.  They're topped with pistachios.

The Dishoom cookbook includes a recipe from the restaurant for a Bacon Naan Roll with Tomato-Chilli Jam. I got no bacon but when I perused the online menu from the restaurant, I found a range of breakfast naan-wiches with bacon, egg, sausage and all combination thereof.  I picked up some hot links from a local BBQ pop-up over the weekend and decided they would be excellent naan-wich candidates so I give you my hot link naan-roll with tomato-chili jam:

I actually think the hot link was a better match for the tomato-chili jam and smear of cream cheese than the bacon would be but I should reserve judgement until I've tried that version. 

 

Started on the naan (also a Dishoom recipe) fairly early but it was getting close to lunchtime by the time they were ready for my breakfast roll.  No complaints.  They're not tandoori naan but they're not bad.

Rajma, Kachumber, Rice, and Raita, all from Dishoom

Used Rancho Gordo Rio Zape beans for the rajma. It uses an onion-tomato masala that's a super flavor bomb - the love child of caramelized onions and sun-dried tomatoes - and makes this dish taste almost meaty.  Comes together in the time it takes to cook the rice but tastes slow cooked. One of my favorite rice & bean meals along with Shaya's red beans & rice and the Greens Cookbook black bean chili.

@Ann_T– that ham is just amazing.  I’m assuming that it looks like it looks due to combination of being a wonderful ham and being in your magic kitchen!  And next to your lovely bread and those perfect eggs…I just can’t find the words.

 

@blue_dolphin – I believe that I would love those cookies!

 

We had out of town friends staying from last Wednesday through Monday morning.  The first breakfast was, by request, the exact same breakfast we gave them when they arrived for a visit back in July.  Our favorite local doughnut shop makes these giant and delicious things:

On Sunday we went to a favorite local diner for brunch.  I had the Hangover – 2 eggs over corned beef hash with a side of biscuits and gravy:

One friend had a corned beef, onion, and green pepper omelet and hash browns:

Breakfast naan-wich

Warm naan spread with tomato chutney, topped with leftover rajma and a Parsi omelet stuffed with pepper jack cheese.  All recipes from Dishoom as corrupted by me. 

I really wanted to call this a naan-rito but my naan was too small to wrap properly. More like a taco. Beans + eggs + cheese = satisfying breakfast whatever you call it 🙃

I modified a recipe in Dishoom for a bread pudding type dessert to be more of a breakfast casserole:

Then I went ahead and put a scoop of homemade pumpkin chai ice cream on top 🙃
