Yet another “things in a bowl” dish. This is turkey mince sautéed with Thai red curry paste, some fish sauce, lime juice and makrut leaves. Leftover rice and a few fresh salad things made for a tasty bowl with almost no dishes to do.

Well, Carlos is back so tonight was a thick ham and bean soup with no onions garlic or peppers. Not very photogenic so no pictures. But I'm happy because I didn't have to do the dishes.

It feels more like spring time around here.  I don't need to be wearing shorts and flip flops on Christmas Day sigh lol.  Come on cold!

@Shelby I really love your catchup  posts.   Everything looks delicious.

 

Although I don't have the same wish as you when it comes to wanting cold weather.

Been loving our extended fall with just rain and temperatures in the double digits.  

Unfortunately the temperature is starting to drop and there is a possibility of some snow.

After always living in and around the Great Lakes and don't miss real winters one bit.

Praying for a green Christmas.

I don't usually care for cacciatore with tomatoes, but I saw a recipe in Matty Matheson's cookbook

and decided to make it.  Didn't have a "Sunday Gravy" so I made just a tomato sauce.   I love sauces with mushrooms and olives.

Corona Bean Ramen

 

Pressure cooked the RC beans for 3 segment of 30 mins/  took 1.5 hrs to get tender.  I did this in HM chicken stock.  I had some lefr over noodles and added them all togetherwith chicken.

It's a loose attempt.  The beans  are so creamy

My meals have been very ugly lately. How ugly, you ask?

 

Chili dog in a bowl, anyone? Chili, chopped up hot dogs that had been microwaved, diced onion, and grainy mustard. There is cheese under the weenies and mixed in with the chili.

locally  its relatively expensive , duh , and not fresh enough .

 

TJ''s wild caught , unfortunately is mostly tails

Here’s another example of “things in a bowl”. Marinated and sautéed chicken thigh fillet with crispy rice salad using wombok, cucumber, green onion and bean sprouts. Chilli crisp on the side.

Today I made a pork tenderloin with Brussels sprouts, onion and apple. With butter and white wine and seasonings. Looks and smells really good but I did not eat it tonight. Yesterday I went to a local meat market and picked up a rack of smoked baby back ribs they had on special for $12. So, tonight I had a couple of ribs and a salad. My sis is coming tomorrow so I will send her home with some of each and will still have plenty to eat until Christmas.

Roasted Fall Vegetables with Harissa Mayonnaise - fennel, cauliflower, sweet potatoes, red onions and chickpeas are oven roasted with an oil-harissa mix. Two meals dictated by the weather. 
 

First meal below was beef stew, mashed pumpkin, mashed potato and puréed cauliflower

2nd meal below was smoked salmon salad. The sliced brown ‘things’ are pickled walnuts and the white balls are mini bocconcini.

@Neely, I have never had pickled walnuts. Do you make your own or buy? I do have a walnut tree in the woods behind my house, but the squirrels would attack me en masse if I tried to take one of their precious walnuts!!

Actually these pickled walnuts were bought in a jar imported from the UK.

These ones are a typical pickled Gherkin like taste and disappointingly no hint of walnut coming through. Perhaps made at home and therefore fresher you might get a more walnut taste.

Another “things in a bowl” night. It was the same marinated chicken but this time with bok choy and spinach over sticky rice with broth. Not sure why the chicken looks so undercooked, tricky light perhaps.

We get the salmon from our fishmonger. He brings a truck to the farm stand near my house on Tuesdays and Fridays. They go to the fish pier in Boston every morning and just bring what looks the best to various markets around. They email a list of what they are anticipating being able to bring two days before the truck comes.   You can request items that are not on that list as well, and he will bring them if he can find them. That was my mistake with the cod. He did not have it on the list, and did not buy any to sell from the truck, but picked up the pieces I asked for. Next time I will just ask for “best available.” 
 

Last night we had rice and bean bowls with guacamole, salsa, peppers and onions, cabbage slaw, low fat cheddar cheese, etc.   That white line behind the bowl is the veining in the black soapstone counters I have in the smaller kitchen off my dining room.  My nephew is home from grad school for the winter break and is staying in the room where I usually pop the dinner plates for photos, so the lighting will be wonky on my plates for the next couple of weeks.

@Shelby I have been AWOL from here for a while and I thought I just posted a reply here but I don't see it now. I'll try again.  I did probably did say that about Kansas sunsets. I remember saying somewhere a while back that God didn't put mountains in Kansas because He knew they"d block the view (of our Sunsets)
