I spent most of my supper time throwing together a pasta salad to take to the new house because I've had a bad habit of going there to work and not eating all day. I'm running on empty. So, taking the salad over to have something to rely on when  I'm there. (No pix)

 

So, I had cooked some RG mayocobas day before. Supper was some rice topped with mayocobas and a little cheese with some Campari (Costco) tomatoes.

I made Moe very happy last night with my Caesar salad. Homemade dressing with a coddled egg,  homemade croutons, with blue cheese and served with a grilled chicken breast.
It isn't often he gets a salad for dinner. Those that know me, know that I could care less about salads. I can make them, I just don't care about them.
The recipe is our favourite Caesar salad is one that I have been making for 46 years.

Original recipe calls for Roquefort, but when I can't find Roquefort, almost any blue cheese will do.

Carrot and endive, cooked down for 60+ and 30 minutes in butter, respectively

Enjoying cooking for us again. 
Poached rockling on bed of puréed cauliflower, broccoli, a few chips and a sauce made from green onion, yellow pepper, tomato and some herbs.

Veal schnitzel is my favourite meal. There is a place about 1/2 an hour away from us which has been in business for 75 years. My deathrow meal would be their schitznel Oscar (shrimp and crab in bernaise,) with red cabbage and fried potatoes. We haven't been as often as we'd like as they are grandfathered so don't have to be accessible and there is a very steep staircase from the parking lot to the restaurant and that is a tough climb for my husband these days. We still manage to make it there once a year for our anniversary.

Some meals over the past week or so...
.Mapo Tofu - added Japanese eggplant 'cos I wanted them! Had cooked these thin Pad Thai noodles and they were not right for this dish! Took them out and glad I had leftover rice in the fridge.

Shake 'n' Bake BBQ Glaze for chicken legs. I had kept the stock left from poaching a chicken. Cooked the rice and the Chinese cabbage with it. Delicious rice! Reminds me of Hainan Chicken & Rice.

Grilled Ground Chicken Burgers with Thai Basil, pan fried potatoes, roasted cauliflower and salad (strips of carrot, cuke, diced red onion, and feta cheese. I used Japanese seasoned sushi seasoning (a vinegar) as dressing.

Breaded Pork Chops, a few shrimp, corn OFF the cob, new taters. WE loved VH Mango Chili dipping sauce on pork, chicken, fish, but they have discontinued it !!! Booo

Another Jody Adams recipe that I haven't made in awhile - Grilled Smoked Chicken with Poppy Seeds and Pancetta.   I substituted Wright's Bacon for the pancetta and dry brined the smallish 3# chicken for 24 hours.  The paste applied prior to grilling includes fresh rosemary, fennel seeds, flat leaf parsley, garlic, honey, lemon zest and poppy seeds.   It is a thing of beauty coming off the grill and taste great.

Oh no = love teh VH mango chili sauce too. I'll have to see if my grocery has any and if so I will stock up!

I've never tried the VH mango chili sauce but here's a recipe my friend gave me if you want to try making your own. Not sure how close this would be to the VH though.  😞 

 

I made it once a while back, pretty sure I reduced the sugar/honey amounts. 

 

Mango Sweet Chili Sauce Ingredients:

 

1 cup fresh mango, chopped

1/4 cup vinegar

1/4 cup sugar

2 tablespoons honey (optional)

2-3 garlic cloves, minced

1-2 red chilies or 1-2 teaspoons chili flakes

1/2 teaspoon salt

1 tablespoon cornstarch + 2 tablespoons water

 

Instructions: Purée mango until smooth. Pour into a saucepan and add remaining ingredients except slurry. Simmer for 3-5 minutes. Stir in slurry and cook until glossy and thick. Cool and store in a clean jar.

Tips: Add lime juice for extra tang

Use less chili for milder flavor

Strain for a smoother texture

Oh boy.....

Honestly, I avoid domestic commercially reared turkey. I find it tasteless sawdust. I'll cook it for others if i have to (and no ones complained when i do). I've made one that I found worth eating- brined,spatchcocked, cooked in a Traeger screaming hot and fast.  No one comes to our house for turkey on Thanksgiving because I don't serve turkey!  

 

Wild has some flavor, still not a lot. It is still very mild and unassuming. As you can imagine the dark meat is more assertive, but still mild.  Wild turkeys eat anything they can catch- grasses, seeds, all manner of insects, frogs etc and that of course translates to flavor of the meat. 

This bird had its legs cooked in gumbo and wild bird legs are an adventure of tendon and tiny bones.  Not as bad as pheasant but nothing like it's fed cousins that only walk from feed bin to waterer.

When partner gets another wild bird, I'll do something different with the breast, probably a schnitzel or similar. I know a couple hunters that swear by turkey nuggets,  who doesn't love something crunchy fried in fat!?!

Grilled satay chicken with peanut sauce. Jasmine rice and cucumber-mint-peanut salad to go with it.  I think coconut rice would have been even better but I got lazy.

Even better (and traditional in Singapore, Malaysia and Indonesia) would be steamed rice cakes called lontong.

Ive previously posted my ' Linguini w fresh Campari tomatoes ' several times:

 

before inhaling the dish , it looks like this :

it looks a bit like a ' standard ' linguini dish , but its not.

 

I thought Id add a 1/2 way pic , showing how this dish is different :

there is a lot of ' sauce ' , if that's what you want to call it.  I make it this way , on purpose

 

as this ' sauce ' is exceptionally delicious .

 

the other Linguini dish I make "  ' Linguini w Pork Ragu ' iPot ' '  has the same sort of sauce , again on purpose.

 

waiting for much cooler days to more of each.

Seared duck breast over pearl couscous salad.  I am cooking duck to medium these days as I get more tender meat than when rare.  Maybe it has to do with the duck I buy here in AZ.

Seared scallops with mushrooms and mashed sweet potato: Mash boiled sweet potatoes with butter and heavy cream. Sear mushrooms in ghee with a sprig of rosemary and remove. Sear scallops in butter with rosemary and remove. Deglaze the wok with Shaoxing wine, add heavy cream, and reduce. Season with S&P.

 

This was the "last meal" for our house guest. She had the choice of this or keema. I think she chose well (even though I love keema).
