    Breakfast 2024

    Breakfast this morning was upgraded canned baked beans. Added onions a little mince and more tomato paste and chilli . Egg of course.

  5. I have to agree with the comments concerning that house (I first thought it was a seaside inn and restaurant) and the building site, I can't see that building surviving a major storm with a significant tidal surge however lots of future work for local contractors. Nice photo of the osprey.

Salmon with mint/cilantro chutney over shrimp roe noodles with some of last summer's long beans, house oyster mushrooms, blistered shishitos and the first of this season's hosta shoots pan fried with garlic, ginger, chili oil, green onion and fish sauce. Enjoyed with a dry NS cider from Lake City.
  7. A few recent breakfasts. Haddock and potato fishcakes, sauteed mustard greens and mushrooms, runny egg with sriracha and a tomato. Egg, chorizo, mushroom, shishito and lettuce on WW (sloppy looking but tasty) with a pear and a shot of V8.

  9. Decided early this morning to use a sourdough pate fermentee that had been in the fridge since last week to make a rye bread. I added 2g of yeast as well. The recipe usually makes two loaves, but I decided to make one big loaf. 16" long and weights 2 1/2lbs. Destined for Schwartz's Montreal Smoked Meat sandwiches tomorrow.

    Back home from a caravanning trip and not interested in doing much for dinner. The wife said she felt like pie.. OK! Beef pie in a bowl.

  12. I do have some kind of press, but only because Jessica and Mr. Kim love using one. I either use a knife or this if it is a lot of garlic.
  13. Not being a member of the Cult of the Pretty Blue Flame, I can't advise on gas rangetops. But @blue_dolphin's advice on KA electric ovens is spot on.

    I want that moussaka @Ann_T! Sauteed green bean and kielbasa tacos with chile habanero, shallot, garlic, egg, feta, and cilantro. Lovely hot and fruity flavor.

  17. not really. the people who built it will be dead before the sea swallows it up. being members of the Philosophy : ' More for Me , Right Now ' common these day w zillion-airs. willing to wager a Prop Bet : as this is a cooking forum : they have at least one , if not more Kitchens they will rarely use : thus : no Rational Combi ovens.
  18. Helpful tip if anyone has kitchen cabinets with Blum hardware...they have an excellent warranty and will replace any that fail at no cost for the hardware ($12 processing/shipping fee). There is an online form and you upload photos of the items. I have soft close hinges on all of my cabinets and the most frequently used ones are failing after 10+ years (there is a plastic insert inside that breaks), I asked for 12 new hinges. My hinges are a discontinued model, so I guess they are sending the current version.
  19. But problematically, at least to me, is building it right near the water.
  20. So to update my test on RH, the RH in my kitchen was 35%. I set the APO to oven mode with 40% steam. I gave it about 30 minutes and checked the hygrometer and its staying pretty steady at 80% RH. This is with nothing in the oven but the hygrometer. Im sure once i add meats to ferment, the RH is going to be much higher. Im not even sure if i will need to add steam.

  22. Yesterday was another gray Cape Cod spring day. I went out and did a little exploring while my husband worked. This is the beach that you get access to with the house. There is a lot of sand dredging happening in town right now to clear the channels for increased boat traffic and replenish the beaches before the tourist season starts. The dredger was working directly behind the beach. I found a handful of sea glass for my vast collection back home. I picked up a couple of shells too, though I usually only look for sea glass. Here's a house under construction near the beach. There is a lot of new construction happening in town, and all of the houses I have seen being built are quite large. Osprey I decided to try a different ice cream parlor. Peanut butter caramel. Too sweet and not worth eating. Oh well! We decided to go out for Mexican food. Husband had a margarita I had cod tacos And he had lobster enchiladas. Post dinner walk on another beach in town

    Hainanese Chicken Rice. First had it at Hainan Jones at Urban Hawker on 50-51st Street in NYC last year. Now we make it about once a month.

    I forgot to post pics of the moussaka I made on Sunday. Moe had a piece yesterday for breakfast and decided he wanted another piece today for breakfast. Topped with a poached egg.

    @Maison Rustique if you have easy access to Trader Joe's consider sub'ing TJ's lightly smoked salmon , in cans for a canned tuna Rx" very tasty stuff if you like salmon.

    I did not take photo, but this is what I had last night, only instead of English muffin, it was on whole grain bread. I can't recall the last time I had a tuna melt and I really liked it with the horseradish. It was very satisfying. Horseradish-Cheddar Tuna Melt
