Spiced Coconut Chicken Rice based on a Bon Appetit recipe - chicken thighs, shallots, garlic, turmeric and cayenne pepper are first braised in some water before adding washed basmati rice and coconut milk and cooked on low heat. Pork hock with soy sauce, white wine, garlic, onions, ginger, allulose, star anise and cloves.

 

I wish there were an animal built of fat, collagen and rinds alone; but apart from meself, I know no other.

It was a long day with the auction folks here. I hadn't eaten all day and my goal was fast, easy, reasonably healthy and tasty. This worked. Sukhi's Butter Chicken with Turmeric Rice (Costco refrigerated section) and I added a little Cole slaw mix for some vegetables. It worked. Now I just want to fall into bed, but since it isn't even 6:30 yet, I'd be up by midnight! Ha!

Here’s  another episode in the series “things in a bowl”. This is pork gyoza (from Aldi) with broccolini and bean sprouts in bone broth. While I usually love everything Aldi, I won’t be buying these mean little things again. Perhaps Japan has spoilt me.

Kamut with Carrots, Red Peppers and Pomegranate from a CI recipe - carrots and red bell peppers are sautéed before garlic, garam masala and freshly cooked kamut are added and warmed through. I learned something new today, and apparently we grow kamut here in Australia.

The goat and potato curry gave us an encore performance, this time with Nagi Maehashi’s smashed cucumber salad and my never fail yogurt flatbread. I did trick up the curry a bit, with extra sautéed red onions and tomato purée.

Sure. Sift 125g of plain flour with 1 tsp baking powder and a pinch of salt. Mix in 125g greek yogurt. Divide into 2 balls, roll out and cook in a dry tava or flat pan, a minute or so each side.

Roasted chile Poblano, roasted red bell pepper, and red onion salad with Parmesan vinaigrette, served with butter lettuce

Red chileatole with mushrooms, chicken, and zucchini. Soup base was toasted ancho chile paste, sauteed white onion, and sauteed garlic, blended with homemade chicken stock.
