Sweet Potato Oxtail Stew - oxtail, green peppers, onions, garlic, orange zest, tomato paste, cinnamon stick, thyme and bay leaves are braised in a mix of veal stock, reduced red wine and orange juice. After two hours you add diced sweet potatoes for another hour and finish with some parsley.

Served with a salad made with shredded jicama and carrots and a dressing with canola oil, lime juice, roasted cumin, garlic, jalapeno and cilantro.

Dinners have been all over the place here. I had to lend my car to son’s wife so didn’t do any large shopping for a week. Then I shopped big time and bought steak and marinara mix plus other goodies like figs and yummy Brie for desserts. 


Steak frites with salad. Butter was the steaks only accompaniment meaning no sauce. The steak was what we call a Scotch fillet.

Below…Seafood risotto, another recipe I came across in Rick Steins Venice to Istanbul series. Yes I’ve cooked risotto like this before but this time doing it his authentic way with a touch of all spice and cinnamon it turned out very good.

Red peppers were $1.00 a kilo at the market so we’ll be having them for a while. !!!
Below stuffed red pepper with a lamb chop and tabbouleh with fresh mint and parsley from the garden.

Charlie asked if I would make lasagna a few days ago. I said I'd do it the next day but forgot.  Said I'd do it tomorrow and today is the day and I forgot again until he reminded me. Something else I forgot is how much active time it takes to make it. I'm getting too old to spend 3 or 4 hours at something like that without taking a break. I am about to rewrite the recipe and cut down on the amount of stuff and combine some steps in assembly and plan a way to do some of it the day before.

I asked Moe if he could have anything he wanted for dinner what would it be.
His quick response was Rack of Lamb.
Thankfully Thrifty's had fresh racks.

Clean-out-the-crisper turkey keema with peas, Napa cabbage, and chayote. Other ingredients included brown-fried onions, jalapenos, ginger, garlic, and turmeric, finished with cilantro, garam masala, and lime juice. Nontraditional but tasty.

 

Mrs. C's sourdough bread with honey butter to go with.

I hear you. I have a great lasagna recipe that the family loves but it is a sh*t  ton of work. Plus when I am going to put in the effort to make it, I usually make three 9x9 pans and these days that costs me almost 100.00 for ingredients.

Cooked Stampeder BBQ Ribs from Giant Tiger - $8.99 but one small rack is not enough for two. The ribs was very tender.
I made Coconut shrimp to augment the protein. VH Mango Chili sauce is great with the shrimp.

Made the first traditional Chinese dish for hubby for supper. First time was 58 years ago and he still says it's his favourite. LOL!
I did one half with Sechuan Preserved turnip slices. The other half is my choice: fermented vegetable (Mui Choy) with fresh mint and chili pepper. It was a dish we had in Durham, England, 1976. in an upstairs Chinese restaurant as we watched the crowds during their annual Miners' Gala parade up to the cathedral.

I bought everything for the recipe all at once so I could see how much it costs and my recipe ingredients cost almost $100. too. I forgot to get heavy cream and sent son to get it, so it may have been a little more. Of course I had some left over ingredients and didn't try to figure the cost minus the extra cheese, etc,  that didn't go into it. I like your idea about making smaller servings. I have cut mine into individual servings and wrapped them for the freezer.

Kimchi Pasta Carbonara from Anything’s Pastable - carbonara purists won’t like it but  this variation was really good with the additional spiciness from the kimchi. Panchetta gets sauteed until slightly crispy. In the pancetta fat you cook the kimchi until slightly caramelized before adding the cooked spaghetti and pancetta and heat it up so that you can mix it with the parmesan-egg mixture.

Tikka Masala Cauliflower based on a Milk Street recipe - Cauliflower gets roasted in the oven with ghee, garam masala and cumin. In parallel, you make the sauce by sautéing onions, garlic, ginger, garam masala, cumin and red pepper flakes before adding pureed tomatoes and cashews and cook it until it starts to thicken. Add the roasted cauliflower, peas, lemon juice and cilantro. Served over basmati rice

Forgot to get my Loo Siu out from the freezer in time, so used a One Pot Soy Sauce Chicken from Marion Grasby.
