After breakfast I felt hungry, so lunch came up a bit earlier than usual.

 

A home made beef burger on ciabatta. With a nice Rioja. 

 

 

Thinking about dinner, now.

Stir fried ostrich with enoki mushrooms. Served with rice.

Lunch was spaghetti with a quick meat sauce made with Rao's Marinara.  Served with a couple of grilled links of homemade Italian onion sausage, Salsiccia di Cipolla.  The recipe for the sausage came from the Len Poli Sonoma Mountain Sausage site.  I've prepared a number of the sausage formulations over the years and they have all been excellent. All of the recipes open as pdf files so it's very easy to build a sausage library!

Lunch was a bit of a disaster. I took some mushrooms - shiitake; jade gill mushrooms (海鲜菇 hǎi xiān gū) Hypsizygus tessellatus; and pig stomach mushrooms (猪肚菇 zhū dù gū), Infundibulicybe gibba and fried them with some shallot.

 

 

 

Then I attempted an omelette made with a goose egg, something I've done many times, but made a careless but critical mistake. It is my habit when making omelettes with chicken or duck eggs to add a splash of water to the beaten eggs - makes for a lighter result. However, it doesn't work with goose eggs - something I momentarily forgot!

 

Instead of making the egg fluffier, it weakened the walls of the omelette and it fell apart when I attempted to transfer it to my plate. It tasted great but looked like a train wreck. 

 

 

 

Well, at least I know what I did wrong.  😬

Yes!  Simple and fast.

2 tablespoons grated palm sugar (We buy it in six-pack discs)

2 tablespoons nam pla or any fish sauce

The juice of one lime

one or two thai bird chiles - available frozen, takes a minute to thaw in water, scrape out seeds

 

Make a bed of arugala baby lettuce, apply sliced shallots, tomato, cukes, leftover filet mignon, cilantro, mint if you got it.

One of our absolute favorite meals, especially with ripe summer tomatoes!

 

Lunch concoction, lots of must-go's:

 

Sequentially saute crumbled Mexican chorizo with cumin seed and sliced onion, jalapenos, bird chiles, and cabbage. Add a roasted chile Poblano and season with cayenne, pepper, fish sauce, and lemon juice. Yes, I was going for spicy. 😉

 

Toss in leftover salmon patties to warm, and top with feta. Sliced avocado to go with.

Slapped together a donabe with leftover chicken, noodles and cabbage in broth and ramen base

I make us this soup quite often. Pork dumplings in a quickly made broth. Chilli oil for heat.

Chicken, apple, cranberry, pecan salad over baby spinach.  Dressing was mayo with chipotle, thinned with the 'juice' from the water in which I rehydrated the dried cranberries.

Since having this dish recently in Singapore, I decided to change the way I make it.

 

Ayam buah keluak - chicken in black nut curry. Some keluak meat (a black paste) is at the top. We had this at Violet Oon a couple weeks ago and it was one of the best things of the trip. Her curry sauce was very thick, so I decided to try it and I think this came out the best since Ive been making it - since 2017.

 

Stir fried bok choy with garlic.

The sausages were debreciner; Beanz by Heinz and buttery potato mash.

While digging thru the pantry I found some forgotten cans of tuna. Not being one to waste- lunch. 

Mind you, I've been eating tuna that I canned, that we caught in WA, for a couple years now.  Everyone that has canned their own tuna has warned us that "you'll be spoiled" and wont stomach the commercial stuff. Lord they were correct. I used to love commercial canned tuna, ate it for decades. There's 2 cans left and there is a good chance it's going to the crows.

Commercial canned is good enough for a tonnato sauce, which is then tasty and versatile.  I did it with some disappointing canned tuna a while back and used it mostly over pasta and roasted potatoes.

A very typical Chinese New Year / Spring Festival meal.

 

Rice noodles with home cured pork. While you can buy this meat in the markets, people generally prefer to make their own (and their own sausages).

 

 

And here are the cured meats.

 

 

This makes the whole house smell like New Years past!
