The Wench surprised me with a couple of Lamb racks.  Friday night and I was not in the mood for cooking but so glad I did.

Tonight I made shrimp and bay scallops using our own blush onions, pesto, grape tomatoes and gold peppers. Purchased organic peas for color contrast.  Imported Baronia fusilli cooked al dente, finished in the sauce.

Lamb❤️. Initially our Thanksgiving back-up but now have a turkey

 

Red Beans and Dirty Rice

Has never been much of a looker. RG pinto beans (I think). Rice and caviar lentils with a small chunk of duck paté for the 'dirty'. I thought the beans were a bit soupy but they usually are. Added the last chunk of barked pork to the beans. ---Extra dirty rice for breakfast.

With Crazy Crust Cherry Pie for dessert. It was kind of a crazy combination with Asian, Tuscan, Southern, and Midwest food but it all worked.

Crazy Crust Pie (Makes its own crust) 

(6 to 8 servings)

Crust: 

1 cup flour 

2 tablespoons sugar 

1 teaspoon baking powder

1/2 teaspoon salt 

3/4 cup water 

2/3 cup shortening

Filling: 

1 can fruit pie filling 

 

Preheat oven to 425o. In a small bowl, combine flour, sugar, baking powder, salt, water, shortening, and egg. Blend well at lowest speed, beat 2 minutes at medium speed. Spread batter in a 9 or 10 inch deep dish pie pan. Carefully spoon filling into the center of the batter. Do not stir! Bake at 425o for 40 to 45 minutes until the crust is golden brown.

Variations:  Any kind of fruit pie filling can be used. If you use apples, add 1 tablespoon lemon juice and 1/2 teaspoonapple pie spice or cinnamon. 

Fresh Apple Filling:  Combine 2 1/4 cups peeled, sliced apples and 1 tablespoon lemon juice with 1/3 cup sugar, 2 tablespoons flour and 1/2 teaspoon apple pie spice or cinnamon, microwave for 3 minutes and let cool before using. Spoon  into the center of batter. Do not stir! Sprinkle filling with 2 tablespoons of brown  sugar. Bake at 400o for 35 to  40 minutes until crust is golden brown. 

Fresh or Frozen Blueberry Filling: 

Combine 1/2 cup sugar with 2 1/2 tablespoons cornstarch.   Mix with 3 cups blueberries and 2 teaspoons lemon juice, spoon into the center of the batter. Do not stir! Cut  1 tablespoon butter into small bits and spread over filling. Bake at 400o for 35 to 40 minutes until the crust is golden brown.

Chicken Tacos (thighs marinated overnight in orange/lemon/lime juice with turmeric, onion and garlic powder then grilled) with a raw tomatillo/cilantro/chile/garlic/avocado/lime salsa.

Moe is still in  the hospital in Victoria.
He had surgery Wednesday morning and he is doing well.
I stayed in Victoria with him until Friday afternoon and then came home so I could work yesterday and today. 
 
I'm heading back down Monday morning and we expect him to be able to come home then.
In the meantime he is surviving without me and keeping in touch on Facebook messenger.

I usually don't cook just for myself, but I felt the need for comfort food.
So last night  I roasted one chicken breast and there was enough drippings to make a gravy.
Matt cut the potatoes for french fries and soaked them in cold salted water for a few hours.
 
I double fried them.
 
Not sure if it was the soak with the salt, or the potatoes, but these were the best fries. They had a really nice crisp on the outside and were dry and fluffy on the inside.
And they stayed crispy.  Didn't get soggy even with the gravy.

A truly nasty late German autumn day at around 4 oC, light drizzle and wind. And to top it off a soccer tournament for the little one (starting at 9.00h) …

It was not the best day for my parents-in-law either, as the clothes they brought did not support watching 7yo play soccer for an extended time under these climatic conditions.

 

After returning home, copious amounts of hot beverages and the prospect of a high calory dinner brought everyone back to life. So … Raclette!
