  2. @YvetteMT just the drumsticks . I plan to ' learn ' with them and move to turkey drumsticks when they go on sale. I plan to 1 ) air dry on a rack in the refrig x 24 hrs first . this is mentioned on better than average BBQ refs. 2 ) chop off an inch or so from the bottom of the leg , no meat there , might help the meat contract off the tendons making removal of the tendons easy. tip from Jacque & Julia. 3 ) chop off 1/4 inch off the top , for 1/2 of the legs , to see if this also helps removal of the meat 4 ) smoke until almost fall off the bone : 150F - 160 F save the drippings .

    Thanks @rotuts! I'm by no stretch a baker but crisps are really easy to toss together. The roofers are getting a peach crisp today with ice cream.

    Walleye, corn and rice. And since i was making dessert for our roofers, I made a little berry (raspberry and blackberry) crisp (in Corningware for the collectors!) for us.

These are not salty . butter-ry , brown sugar-ry , toasted pecan-ish , the sweetness comes from the white chocolate chips I think. make sure you look for a bin that's ' well done ! not for those trying to loose weight . Im stocking up next trip , and getting some vanilla ice cream to go with. N.B. : these cookies are not intended for pedestrians . Connoisseurs Only. P.S.: @blue_dolphin you are correct . marshmallows , not white choc-chip

  14. Last night I couldn't stand the temperature so dinner was hummus and tortilla chips. But tonight I smoked the hamburger. I will modestly assert that I have the method pretty well dialed in: Mesquite Half pound ground beef Smoker temperature 140C Target temperature 56C Smoking time 45 minutes, turned back to front half way through Measured final temperature 55C
  15. Very much so. The marshmallows are different but the vibe of salty crunchy bits in a cookie with a ton of mix-ins certainly fits. Here's Christina Tosi's Compost Cookie recipe for those interested.

    The chicken skin fruit trees have just cropped and it's a bumper harvest this year. These pictures were sent me by a friend in Wuxuan, a town near here.
  17. That what the sandalwood boards are - slices of tree trunk. I've seen the same with the other true woods I've mentioned.
  18. I do regularly eat white button mushrooms. Never had a problem in 50 + years.
  19. @liuzhou what about those tree stump cutting boards I've seen? I don't know what type of tree those cross sections are made from.
  20. I don't go there either. As a former card carrying member of the SF Mycological society I would never advise eating raw mushrooms, even the white buttons from the grocery store.
  21. Hopefully it will arrive to her on Wednesday and I will have UPS pick it up the same or following day... Cutting it close! Hopefully the low value exemption will stay in effect.
  22. I could not resist! The siren song drew me in. Have just ordered one of the new CSO-500 steam ovens! (sound of angels singing.... ) 🙂 My husband (very reasonably) said: "Doesn't the one currently on our countertop work ok?" AND "Don't we have an extra in the garage?" Yes and yes, but the one on my countertop is 3 years old and is disgustingly grotty. Even though I clean it regularly, it gets used so much that it becomes very hard to clean. But I do know someone who would love to have it and I will clean it up as best as I can. Also, my stepdaughter is now mad for this oven, I gifted her one about a year ago. At some point, she will want a new one. All is good. (more angels ..... ) 🤣

  24. If you set your oven to 200f/100%humidity/sous vide, nothing will boil. Put a glass container in it with water, check on it after an hour. It should not be passing bubbles

    Yes, but.... They last for a few days, which baguettes in France (or Vietnam) don't. In France four hours at best. In Vietnam, bánh mì sellers get two or three deliveries or bake the same number of batches throughout the day. In France, you have to get up early or go without.

  27. If necessary, we'll get you one here in Canada and ship it to you!!! 🙂 One of my cousins who now lives here in BC is going to visit his sister in Kansas City next month. But I think the plan is to fly. If he was driving, I would ask him to bring one along. 😞
