but has two blade sets .

 

in the case of ginger , it very fibrous , so might heat up the ginger quite a bit to get to ' fine '

 

if it gets there .

 

the 16 - 19 USD version do not have a very  sharp blade , so y0ou won't dull it.

 

just make sure the ginger is really really dry or you won't get very fine.

P.S.: if you tried to grind the fibers down w an M+P , it might take quite a bit of effort ,

 

enough that you might not want to try that again .

Yes, but there was quite a bit left plus the grind wasn't fine enough.  It was not a powder which is what I would like.

Does anyone know about a burr grinder for spices, unlike the standard coffee/spice grinder that's like a mini-blender?  Whenever I grind store bought spices (after toasting), especially, coriander, I can never get it super fine like if I bought ground coriander from the spice shop.  I wonder if using a burr grinder is the only way to get it super fine like that.

Im betting you are right .

 

then , cleaning the burr grinder of all the ginger ' oils ' , and other oils

 

might be a big PITA.  or you really like a very subtle ginger background.

 

@ElsieD  was the ginger , initially thinly sliced ( again the fibers , if indeed the fibers have a dominant direction )

It was cut by my Breville FP in 1/4" slices.  They were sliced crosswise.

w/o destroying the machine , then drying the think slices ?

 

then , process the thin slices in the FP when fully dry , and see what you get ?

I have a slicing blade that came with my machine that is adjustable from 1 mm to 8 mm with graduations in between.  I doubt it would hurt the machine given that ir came with it.  I am new to this hydrating business so I took the advice of several supposed experts when I settled on 1/4" slices.  Your post intrigues me so next time I'm out I'll pick up some ginger and try it out.  It could very well be that that will work nicely.

I called Crate and Barrel (they sell it) and they could not find any info on how fine this would grate.  @JoNorvelleWalker can you tell me how finely it grates?  And it's capacity?

Capacity is about six nutmegs.  The shavings are about as fine as one would expect nutmeg to be.

 

For spice grinding I mostly use a mortar or for grinding in quantity I employ my Waring:

I seldom bring out my melanger but to grind something incredibly fine, a melanger is the way to go.

I've just finishing prepping what felt like a never-ending bunch of ginger.  It is in the dehydrator now.  One tray was sliced 1 mm thick the rest 2 mm.  I'll post how it turns out.

when completely dry , try pulsing the 1 mm and see how fine you can get w the FP.

 

if you get a powder that way that's fine enough for b baking , Id consider leaving the

 

1 mm sealed until you need it , then pulse to powder .

The machine had no trouble at all slicing ginger into 1 mm slices.  But, yours truly found it a PITA to place those very thin slices on the drying racks which is why I then set the slices at 2 mm.

 

When they finished drying i tried turning it into powder using my FP.  My FP came with a smaller bowl that fits in the large bowl which is what I used.  It did not turn to powder.  I then pulled out my Vitamix and voila!  We have ginger powder.  My almost 3 pounds of fresh finger gave me 91 grams or 3 1/4 ounces of ginger powder.  Next, I'm doing a test run of mango puree and strawberry puree.  I currently have a test run of cooked rice in the dehydrator to see if I can turn it into "Instant " rice.
