Been a while.  Rained a ton last month and kinda stunted the garden.  I think we got like 16" in a little over 2 weeks.   Didn't stunt the weeds, though sigh lol.  Still trying hard to eat keto-sh friendly.  Nice to have our garden squash--the stuff from the grocery store just isn't the same.

Ronnie got some lovely chicken gizzards from the Asian Market--so clean and nice.  Fried and pressure cooked with ...wait for it...a salad

Misfits had Cornish game hens.  They are GOOD.  Nice and juicy.

Rubbed a mix of butter, garlic, salt, pepper and Italian herbs under the skin.  Roasted with cukes and tomatoes from the garden and the last of the asparagus.  Also made a little gravy using Xanthan gum.

Grilled pork tenderloin.  Mi esposo made this Gojuchang sauce.....ez and nice!   It's in this burger recipe and went quite well with the pork  https://cooking.nytimes.com/recipes/1023423-gochujang-burger-with-spicy-slaw

.05 cents for corn? I haven't seen prices like that in decades and we live in an area full of cornfields! I was quite pleased to find it for .60 a cob at a local grocery. The corn stands which riddle our area in the last half of July until the end of September aren't up yet but even then, anything under .50 a cob is a bargain.

It's a 4th of July special, but good the whole week.  I went by this morning at 9am and the bin was empty!   Not surprised.  They had a generous limit of 8 ears per customer, per day.  Most of my errands take me past the store so I'll check again.

As I approached the checkout I wondered if they'd take a cc for 10 cents; I don't carry US cash.  So I forced myself to buy 2 candy bars to be sure I could charge my purchases.

In Jalisco, the chorizo is very soft, you cannot form it into a patty.  When you fry it, it melts down to almost nothing, a few tasty crunchy bits.  It is used more as a seasoning than a main ingredient. 

 

Here in Tucson which borders (and was once part of) the MXN state of Sonora, the chorizo is more hamburger-like in texture.  

 

I keep it simple, grill the chorizo patty, add cheese and few condiments, but always with fresh cilantro.

Here's how AI describes it, and I'll confirm it.  It's the tastiest chorizo I've had in the US; we lived in Bisbee many years ago which is even closer to the Sonoran border than Tucson and I fell in love with it at first bite.  It's very well spiced.

Liuyang black bean chicken with long beans. Chicken thigh chunks marinated with soy sauce and then twice fried. Flavors included ginger, garlic, red chile flakes, Shaoxing wine, and rice vinegar.

 

Mrs. C made beet salad with toasted walnuts and feta. Jasmine rice with sauteed ginger to accompany.

Blazing hot tonight, and I had planned for pizza. My oven was at 950F when I checked it.

I'm glad to be rid of this particular package of halibut.  I think they get tough as they get bigger.  IIRC, this one was 75 pounds-ish and I'm not a fan.

Last night, Cleanin'-out-the-fridge-Stir Fry.

 

My fridge was sorta bare, and my neighbor's fridge was also poorly stocked. We combined what we had and I cooked the combination to make a quick pan of veggies and chicken with the last of a package of Soba noodles and made dinner for the two of us.

 

Chicken, onion, bell pepper, garlic, ginger, sliced shiitaki, soba noodles, some jarred sauce, and greens for flavor and appearance:

Last night's dinner.
Something that I've never made made before.

But saw fresh squid at the fish counter and decided to make Calamari for dinner last night. Served with Toum, a Lebanese Garlic sauce that made the perfect dip.
I cut the squid into rings and then soaked for a couple of hours in buttermilk before tossing with a combination of flour, cornstarch, baking powder, salt, pepper, cayenne and oregano.

Rigatoni with spicy sausage sauce: saute garlic in butter, brown sweet Italian sausage, and then add chopped fresh tomatoes and cook down. Finish with cayenne and lots of grated parmesan before tossing with the pasta and pasta water. Mrs. C liked this, even though she is not usually much of a tomato sauce fan.

 

Grilled eggplant with garlic, rosemary, and black pepper. Halve and score Japanese eggplant in a crisscross pattern, sprinkle with salt, and set aside to drain. Fill cuts with garlic, rosemary, black pepper, and olive oil, and then broil, basting occasionally with more olive oil. A favorite.

 

Both from 'Marcella's Italian Kitchen'. I have not cooked much Italian lately, but friends stopped by for a Pug Play Date and we thought they might stay for dinner (they did not, but best to be prepared).

I was a bit taken back when I opened the packet. I had just taken out a 1/2 dozen shrimp to thaw. Usually get a snapper head and frame, sometimes a couple collars. This was just heads and collars full of meat. Arctic char I think. Wish I had some lemon grass. Shrimp and the fish cubes went in the freezer.

My sister brought some halibut home from the farmer's market next to her office yesterday, so we had mustard coated and roasted halibut with lemon caper butter, mashed potatoes, roasted broccolini and some peas from the freezer to bulk out the broccolini.

I really had a yen for this favourite dish tonight. I have made it in the past but one local restaurant does a class A version so I ordered delivery.

 

黄豆焖鱼仔 (huáng dòu mèn yú zī), Stewed soy beans with rice paddy fish. A local Miao minority dish. With rice.
