My Mom used to make the cured meats before they were available in the stores in the city (1958). We lived in a small rural village, so Mom made her own, based on what she used to do in China. I love these meats cooked with rice in the sand pot.

Yeah.

 

Most people in rural areas still make them themselves, but many in the cities do too.

 

Yeah I love sand pot meat+rice too. But many other ways, too.

Using cottage cheese instead of salad dressing is brilliant. I usually just eat it with fruit or tomatoes and basil or spread on toast with lots of pepper. I really, really like cottage cheese - always have.

I love it too! Except without the fruit, I lean savory for nearly everything and cottage cheese definitely. I use it in lieu of dressing because-way more protein and usually less calories and I need less calories.

Ribollita Stage III: I added some leftover ribollita to a rich, brown chicken stock in this stage. The soup was freshened with some frozen veggies and some additional spices were added to somewhat change the flavor profile. The resultant soup was topped with 9-month-old freshly grated Pecorino Romano. Trader Joe's Corn Dippers were served alongside. A lightly brewed Himalayan black tea was the chosen beverage.

Off-the-shelf Lunch:  I added a small chipotle pepper and some of the adobo sauce to a container of TJ's Low Sodium Tomato & Roasted Red Pepper soup, gave the mixture a ride in the Vitamix, and ended up with a subtly smoky and lightly piquante cup of soup for a simple and surprisingly tasty lunch.

the recommendations were very accurate .  Superb food.  Ive had Indian in  : India , London , various NYC locations and a few around Boston

 

this place was as good as the best.  We ordered too much , but no matter .  I brought it home.  Lucky Me !

Chicken Biryani .  had a HB egg in it , and two types of chicken :  in the dish , chicken w bone-in, on top , a different boneless chicken    rice very fluffy and individual grain 

 

 

beer and Pakora .  the pakora was the best Ive ever had .  very crispy , not greasy , excellent seasoning

as good as it gets for Indian !  brought home a lot

 

so for todays lunch  ( later and dinner )

outstanding at room temperature !

 

they discount 10 % for cash .  will bring cash in the future.

On a cold, rainy Sunday, there's nothing better than Indonesian Padang food. This is a padang classic - ayam goreng serundeng - fried chicken. This version simmers the chicken in a spice paste made from shallots, garlic, ginger, candlenuts, turmeric, coriander powder and a lot of galangal, and then shredded coconut. Once the chicken is done and tender, it's removed and the solids strained from the liquid. The chicken is then deep fried and once the chicken is done, the solids are deep fried to a golden brown and then drained. It's a lot of work but so worth it! Served with homemade sambal ijo - literally green sambal made from 3 different types of green chillies, garlic, shallots and green tomatoes.

Sooo good , and too easy .  Ive posted about these before

 

TJ's Naan-ish , Fontina , in this case , Campari tomats  , from TJ's , counter aged 

 

Tuscan Sunset  ie dried Italian blend   TJ's lower salt salami .  Olive oil , Tabasco Chipotle 

 

I cut the Campari in 1/2 , and seed , to get rid of extra moisture   dice , add seasoning

 

 

I prepare everything beforehand , then get the Naan out of the freezer.  Keeping the Naan frozen makes for a perfect crust  

 

Pliable , some crunch on the edges.     diced the salami and cheese

In the AF , 400 F cold start

 

 

 

about 4 minutes.  you watch it for the last minute or so 

 

 

Plated  I add a a good slug of EVOO  (TJ's selection )  and  T's Chipotle

 

you can't see the EVOO , but its there w an amount to notice

 

4 minute Prep , 4 minute cook 

 

you get the idea.   tasty

Went to a restaurant for lunch.

I had Ceviche which was delicious. You can see my grandson’s fingers making a grab for my bowl. I managed to divert him, save the bowl and take the photo so was quite pleased.

Areyes with some liberties taken with the seasonings cumin, za atar, garlic, scallions, etc.  On the side , tomato confit sauce with cilantro, pickled radishes and flavor bomb cherry tomatoes.

Wah! I haven't had areyes in decades. I'd completely forgotten they exist! I can get pita bread here, but the spices are more difficult. If I do make them, I'll be taking a lot more liberties.

Thank you! Speaking of liberties, I made them with some leftover salmon burger mixture, spread it a little more than 1/4” and they cooked very rapidly.  The seasoning needed to be more aggressive than what I had made, some preserved lemon would be nice. Definitely a repeat with fish/ seafood and appropriate but likely not authentic type seasoning.

ETA a more traditional yogurt sauce would also be lovely with the fish, maybe with some finely minced cucs added.
