Leisurely breakfast this morning.

Egg salad (with Thai chili, dill and chives), pickled herring, house gravlax (with capers and fresh dill), mini cucumber, mustard sauce and WW baguette.

Mix of strawberries, grapefruit and orange and a glass of V8.

Beautiful clear skies this morning however showers forecast for later today. Hearty breakfast to take advantage of the weather and get some things done outdoors.

Eggs soft scrambled with Thai chili, green onion tops and cilantro, hot Italian sausage and a WW English muffin with Bonne Maman orange marmalade. V8 and a mix of strawberries, grapefruit and orange.

So many gorgeous breakfasts.  I would love to sit down to so many of these!

 

As usual lately, health issues are getting in the way of my eG activities – too many doctor’s appointments!  But here are a few recent meals.

Benton’s bacon, eggs, and cheese on a toasted bun:

Oh, Aldi!  But it improved with the addition of some Edwards country ham, fried eggs, a few leftover tots, and some fruit salad:

Twice in the past couple of weeks, Jessica has shown up with doughnuts from our favorite local place.

This is great bread that I’ve been buying lately.  It is in the Kroger bakery section (but not baked there).  The slices are large and have a great texture and the bread is not sweet. 

 

The women of my church do a monthly breakfast potluck and last Saturday was the day for that.  I made some no knead bread, honey butter, and some of @Tropicalsenior’s microwave lemon curd: Second rise:

This is good, but not great bread.  It’s a little stodgy and slightly moist.  It makes great toast.  Everyone seemed to like it – there was almost nothing left of 2 one-quart loaves.  And the lemon curd and honey butter were very popular.

@Kim Shook, I'm very sorry you are dealing with health issues, happy that you are addressing them and hoping they can be resolved soon!  Very impressed that you managed to document all those breakfasts, which made me crave both beans on toast and lemon curd!

 

Yesterday, I had a fine sandwich made from the previous day's Thai steak salad.  I warmed up the leftover steak and grilled onions and added some additional dressing and piled that on a toasted bun spread with a red curry mayo and topped with lots of arugula and herbs.  I was hangry and failed to take a photo so you just get that teaser.

 

Today I made this Fried Egg Sandwich With 'Nduja Mayo and Broccoli Rabe from Serious Eats.  Very good.

Your egg and broccoli rabe sandwich looks delish, but red curry mayo also sparks my interest. Of all the variations of spice may I have concocted, for some reason I never tried red curry. Must make amends.

It was pretty good. I Googled Thai steak sandwich for ideas. Found some promising ones that were too involved for my little leftovers but one used a green curry mayo. I thought a red curry would be better with the steak and grilled onions but would be up for trying a green curry mayo next time.

Yesterday's and today's breakfast.

Waffles with strawberries and crabapple habanero jelly and peameal bacon (only one pkg. left in the freezer).

Breakfast sandwich of an egg scrambled with a few shrimp, shishito peppers, green onion and dill on a WW English muffin with tomato and lettuce. Sloppy to eat but tasted fine. With a mix of strawberries and grapefruit.

Baked a no-knead focaccia yesterday ('divots' of @ElainaA's roasted tomatoes).

Trimmed the four crusts and gave half to my neighbor and kept half for sandwiches.

Cremini mushrooms, a mix of green onion whites, shishito and Thai chili and the onion tops and fresh tarragon. Mushrooms and pepper mix cooked down, eggs cracked over and garnished with onion tops, tarragon and pepper.

Served with the reserved focaccia crusts for dipping.

Id add some scrapple , to fill things out.

 

My choice would be a couple of slices of blood sausage.

I've never had scrapple however since I like blood sausage, head cheese and similar products I'd most likely enjoy it.

That looks really great for what I assume is a grocery store croissant. We had Father's Day brunch here with the girls and their SO's and while I had planned to make cinnamon buns, I ran out of steam so went to our local grocery store that has an in house bakery, for croissants and cinnamon rolls. I suspect that both were made from the same batch of dough...

For many years, my boss was a professor from France. One day, at a gathering at his home, we were discussing the quality of croissants from various local bakeries. His little daughter piped up with her judgement that the best croissant was the one that left the most shattered crumbs on the plate. So true!

I sliced a little fish off husbands dinner of flake and used it to make a very simple kedgeree for breakfast which I enjoyed.

So many of us are stuck in these boxes of 'that's not breakfast food,' and thus we don't eat what we really want, and you two are eating what you want, when you want it. And to top it all off, everything you make looks absolutely fantastic.

 @Kim Shook Breakfast isn't one of my favourite meals.  But Moe loves breakfast and I know he would be happy with all of yours.

 

Including the donuts.  If I were to eat breakfast every day, it would be something sweet like donuts or cream cheese danish, etc...

Today's breakfast was the Chicken and Ginger Pad Thai from Alex Guarnaschelli's cookbook, Cook with Me

This is not Pad Thai, nor is it even a good noodle dish. I used tofu instead of chicken and added some sugar snaps but that's not the problem.  After the photo, I added a LOT of sambal oelek, which helped, but it still wasn't particularly good. 

This month, the cookbook club I participate in is cooking from Night + Market by Kris Yenbamroong.  He includes a Pad Thai recipe that's rather untraditional, but really works.  I decided to cook the other Pad Thai recipes in our club books, of which this is one.  I'll spare you the details on this one but after I'm done, I'll post my findings over in the very ancient Pad Thai cook-off topic.   Next up is Kenji's recipe from The Wok

Tangy stir-fried cabbage and glass noodles from Tenderheart
