Roasted golden zucchini "noodles" topped with cherry tomatoes and broccolini roasted with garlic, olive oil and red pepper flakes.  Basil and parmesean cheese also.

Sunday braised short ribs. Tomato, potato, yellow carrots...smothered by a big brunch salad/slaw...fennel, greens, herbs, cucumber, carrot tops, yellow beets, red onion, prosciutto bacon. Nice prepped Monday lunches.

Lasagne Alla Verde Bolognese from American Sfoglino.  It took me a couple of days to get this in the oven but it was worth the effort.  The ragu was made per the recipe but I substituted Citterio hot capacolla and homemade toulouse sausage for the pork shoulder, mortadella and prosciutto.

Tskhare Neknebi (pp 344-345), Spicy Ribs.  Recipe from the Diaroni restaurant.  Ribs were marinated overnight in a mixture of mayonnaise, sunflower oil, ajika*, garlic, and a serrano pepper.  Served with raw onion.

 

I consumed an inordinate amount of beans and a raw onion.  Work at the library in a few hours should be fun.

 

 

*ingredients:  utskho suneli, fennel, Georgian bay leaf, garlic, coriander, red pepper, and salt

Phat Phrik Khing - green beans and tofu, with a dry red curry with makrut lime leaves, garlic, some shallot.

Yellow curry with pan fried vegetables- potato, carrot, cabbage, onion. Tofu skin rolls, tomatoes, makrut lime leaves, ginger, star anise, lemon grass, coconut milk.

Coconut fish curry with some of the huge supply of green beans I got in this week's CSA box.  I still have enough green beans for another meal or two.

orecchiette with goat cheese pesto ( basil, 1 clove garlic, pine nuts olive oil and goat cheese instead of parm) added green beans.

Really nice ginger/garlic sausage. The new, maybe young and passionate butchers, are making nice tender lean sausages. Less a salt-lick fat greasy product.  

Weeknight meal was a bit postponed so my pretty veg of antipasto veg combo sat under a heavy cast iron on the griddle too long. Zucchini, carrot, leek, fennel, red pepper, hatch chili...mushed. (I knew better but s*it happens). 

Made nice lunches. A few slices of sausage over a pile of fresh slaw/greens/grains. Kimchi.

Bit of an „leftover emergency dish“: Paella with shrimps, octopus, tomato and edamame. Family approved, so I am happy with the outcome 🤗

Mi esposo is spending the night in our new local hospital after a procedure this morning (in the past he would have had to go to Guadalajara, an hour away).  

 

Today is a major holiday, Día de Independencia.  Despite the holiday, his specialists were there for him at 6AM (it was an emergency).  They called in the whole team from Guadalajara after determining what was needed; they got there in 45 minutes.  Amazing health care here.  

 

Dinner.....Tostadas de Tinga de Pollo.  After he told them how good they were, they brought another plate for me.

Wow a major medical procedure followed by good food, You are clearly not in the US. Hope all is well.
