There was an older gentleman (French surname) who was on PBS for years. His show was produced by some Florida University ( in Pensacola, I think). He was actually very knowledgeable, but had no timing.

I don't know where he is, sorry. The only thing I clearly remembered about him was a finale of a white plate covered in white food, like poached fish with cream sauce, cauliflower and mashed potatoes. Not very aesthetically pleasing :sad:

I think Gordon Elliot should be shot below the waist. He's a little too "enthusiastic" for me. Alton Brown has the best show--not only technique, but science background, choice of ingredients, choice of equipment, etc.--the kinds of things most cooking shows don't cover, and all in thirty minutes. :smile:

gawd, wouldn't it be great if Food Network would rerun some of those old cooking shows?? They do show old Galloping Gourmet eps late at night but lordy, I can't watch 'em. Graham is just unbearable, IMO. Way too annoying.

But old eps of Julia would be fabulous, I'd love to see the old Floyd shows or the Justin Wilson shows. "jist take some own-yowns..."

My Ũ.2 on the various personalities is as follows:

I have to respond to this because it really made me laugh.

1. Gotta agree about "Roons" How the fuck did this guy get a job? He's painful to watch, and I'm sorry, but the Italy travel show sucks. Mario, babes, you gotta change that.

2. Bobby "booby" Flay: Somebody whack this guy. He's the most arrogant piece of shit existing. And the sidekick Jacqui. Has anyone ever read her bio on foodtv.com? here's a piece of it:

"Sage advice: I am a big fan of pâté de foie gras. However, when traveling in Paris and eating in Michelin three-star restaurants be sure you understand what you are ordering. I like my pâté with cream, cognac and truffles; what I got was a gigantic piece of hot duck liver that looked as though it was still alive. There's not enough vintage Margaux in France to get me to eat that. "

Please tell me she got fired for making that statement.

3. Gordon Eliott: Agree.

4. Ming Tsai: Agree.

5. Alton Brown: Agree.

6. Wayne Harley Brachman. Now, I like this guy. He's so Jewish it drips off of him. But some the funniest lines on the whole channel have been from him on Melting Pot.

Sara Moulton used to work for Julia Child on her TV show.

Jeff met his wife Patty (she's from Brooklyn) in NYC, maybe he did his original research right here in the Big Apple.

Do they have cooking shows on those porn stations?

Okay a few replies...

Gordon Elliott~

Met the guy once during an interview....I went in thinking ewwwww I gotta talk to hiiiiiiim????

Hes so unlike his on camera persona. Dont forget hes basically a TV personality...he gets paid to be what they want him to be. Definitely rates an invite to dinner at work.

Alton Brown~

He rocks...hes crazy and I just love it. If the info hes imparting is accurate...more power to him. Id surrender a limb and an organ to get him to dinner at my firehouse.

Emeril~

Seems a bit of this and a bit of that which Ive heard about him seems to be common opinion. I like his animated style. Cant stand some of his recipes...made a pepper crusted pork loin once...my lips burned for two days. Another case of hes being paid to provide a persona...who wouldnt? I hear frorm people in the business and eaters alike hes the exact opposite in the restaurant setting. Dont forget his Essence of Emeril persona...a lot more sedate. We did invite him to my firehouse. Not even a note back from staff to say ARE YOU ON DRUGS YKNOW HOW MANY INVITES HE GETS???

I also like the early version. The later one was no fun what so ever. But remember he damn near lost Trisha...and probably had some good health scares himself...thatd be enough to sober anyone with an ounce of intelligence up.

Jacques Torres~

They always save the best for last. I HAVE had him to my firehouse...but for dessert. Meeting him and his wife has been the pinnacle of my Foodie career. Everyone in the world should visit their shop at least once in their life.

Did anyone see the Iron Chef battle between Flay and Morimoto. I was a bit embarrassed by the American audience's cat-calls. And I loved how Morimoto criticized Flay for standing on his cutting board at the end of the show.

By the way, referring back to one of the original posts, what does Emeril do wrong? I'm generally annoyed by his sillyness, (and I wish he would stop saying "d'gressssss"), but can you let us amatuers know what he's not doing correctly?

I am suprised more of you did not mention Nigella, on Nigella bites.

I have read that her books are hard to follow and the results from her recipes are mediocre, but I don't care I think that show is great.

One time she deep fried candy bars...... Who does that???

She cooks like I would at home tasting everything right off her fingers, you don't see the aneseptic stage like you do on other shows.

Good Eats takes the cake always.
