WOW! Did you make that from scratch, or was part of it from a kit?

The only full recipe I ever found takes 8 hours to make, and has some specific ingredients including river snails from Liuzhou. It is also made with pork neck bones and chicken feet.

I have only ever had it from this kit -

No. I never eat those "instant" packs. They are vastly inferior and double the price of any Luosifen sold freshly here.

 

I ate this in a small local restaurant. We have a Liuzhou Luosifen topic here. No one makes it at home.

That looks delicious, and I love tabbouli! You mentioned mint and parsley, but do you not include cilantro? My recipes call for equal amounts of parsley and cilantro, with a bit of mint. Not that it matters: I've been taken to task here for the relative amount of bulgur, so I'm certainly no expert. 🙂

 

More to the point: what sort of dressing do you put on the tabbouli?

 

Oh, and...did you make those spring rolls, or buy them prepared?

Coconut chicken soup (tomm gai kaa onn): Sequentially simmer coconut milk with 1) a paste of galangal, garlic, cilantro stems, roasted white peppercorns, lemongrass, and shallots; 2) chicken thigh chunks; and 3) bruised lemongrass stalks, lime zest (sub for lime leaves), sliced galangal, sliced Holland chiles, and  fish sauce. Finish with lime juice, palm sugar, Thai basil, and cilantro leaves. 

 

I made the base soup mild for Mrs. C, and added a dollop of roasted chile paste to mine.

Bean sprout salad (yam tua nork): Make a paste of grated and roasted coconut, roasted peanuts, and salt in the mortar. Mix with bean sprouts, sliced shallots, and cilantro leaves, then season with coconut cream and rice vinegar. Will make again.

@Smithy Yes it was good. My way of making tabbouleh is to use equal amounts of mint and parsley… don’t think I’ve had it with cilantro but I can imagine it’s good. The dressing was not measured just a good glug of evoo and a splash of apple cider vinegar with a squeeze of lemon juice … plenty of pepper and salt. I used couscous not bulgur which was ‘soaked’ to fluffiness with a hot vegetable stock.

Chicken with lemon butter caper sauce and roasted veg (carrots, mushrooms, onion, red bell pepper). Ladled more sauce over the veg after the pic. So good!

A few nights ago, a very mismatched meal of air fryer zucchini fries and a cup of chicken and sausage gumbo. Each element was good! The zucchini needed using and it did not die in vain.

Thanks! I’ve made this several times and really like it. I’ve also recommended it to friends who love it, too. Super easy but looks almost dinner party worthy. I used black cod today but have used other fish with good results. 
If you decide to make it, I recommend doubling up on the sauce ingredients so there’s plenty to go with the rice.

Definitely going to try this and thanks for the tip on doubling the sauce. We call my youngest sister Double Saucy. She loves to cook and eat but automatically doubles or triples the sauce and in restaurant always, always asks for double sauce.

I hope you like it!  The sauce only takes a few minutes to mix up, then the fish marinades in it for 15-30 min which allows plenty of time to cook some rice and veg or make a salad so it’s a very relaxed meal.

We've had a few meals this week featuring roast peppers.   I made a pork and green chili stew with roasted anaheim, poblano and jalapeno peppers earlier in the week that I've enjoyed for breakfast, lunch and dinner.  It was a little on the spicy side for my wife and one dinner serving was her limit.

 I also roasted some meaty red peppers that were combined with grilled vegetables, marinated artichoke hearts, sautéed oyster mushrooms and cotija cheese  that was served on toasted focaccia bread from Craft Bakery.   The cheese was added to the mushrooms while they were cooking and developed a great crust similar to halloumi.

I second this fish recipe. Everyone in my house really likes it, and it’s hard to come up with something that everyone in my group really enjoys!

I've definitely been doing really bad about about sticking to the low carb/no carb thing.  I hope I'm not slowly killing Ronnie one French fry at a time lol sigh.  It's just hard in the throes of winter.  I want alllllll the comfort foods and that means carbs.  So, I hope I'm forgiven by his doctor.  But I bet I'm not.  Anyway.  We've finally climbed out of the deep freeze.  The snow that hasn't melted will today.  I've turned the heater off that was by the pipes in the basement and turned the faucets off from the incessant dripping that was driving me crazy--but that's better than busted pipes.  I better order my seeds for the garden within the next week or so because spring is fast arriving.

 

Picked up a Sam's rotisserie chicken and got several meals out of it --quesadillas was one.
