I have not posted for a while. Have been very busy to upgrade my garden to deal with climate change.

Ordinary chicken schnitzel with nuked new potatoes and coleslaw salad. Pomegranate seeds added.

Ribollita: Today I started a ribollita. I made the minestrone, which is shown here. The ingredients include diced, smoked pancetta, diced leek, some fresh Calabrian pepper, likewise a serrano, carrot, celery, Yukon Gold potatoes, cannellini beans, some leftover savoy cabbage, a bunch each of cavolo nero and chard, including some of their diced stems, zucchini, a few crushed, whole peeled tomatoes along with their juice, and a few sprigs of rosemary.

 

When it cools, I'll layer the soup in a bowl with some stale rye bread leftover from another dish, and let it cool in the fridge to allow the flavors to meld overnight.

For CNY supper, we had a small AAA Prime Rib roast:

Last night we had leftover Buddha's Delight.

Tonight, we finished the rest of the prime rib.
Leftovers all gone; and it'll be a clean slate for February! The beef reheated well in gravy.
I LOVE rice and gravy!

Cuban inspired pork tacos from Lorena Garcia’s New Taco Classics - cubed pork tenderloin get marinated in a mix of garlic, oregano, thyme, olive oil, orange juice and zest as well as lemon juice and zest. After half a day the meat gets pan seared before quickly roasted and finally put under the broiler to brown. Served with lightly caramelized white onions (made with lime juice and white wine vinegar) and cilantro on corn tortillas

Another oven roasted panko coated haddock sandwich with baby spinach, tomato and a quick 'remoulade'.

Served with olives, cucumber and a blue cheese dipping sauce.

Podina (mint) raita: Greek yogurt with minced mint leaves and jalapeno. House guest prefers not-too-chile-hot so this came in handy.

Which recipe is this exactly?? Do you mind sending the link. Its the first time I have seen 'Palak Gosht' with 'raita', ginger and 'jalepenos'. Im afraid, a fairly simple recipe has been complicated. Kudos to your efforts tho. It looks good regardless :))

Where I come from Palak Gosht is eaten with normal rice (as in just white rice)... There are people who add potatoes as well. Then it becomes Aloo(Potato) Palak Gosht. 

It is eaten very frequently and is very forgiving as well for alterations.

Hot grapes with chicken and fennel, a small rocket salad on the side. Crusty bread provided the carbs to soak up the juices.

A quick throw together meal of sauteed haddock 'trim' and shrimp to bulk up the protein, oven fries with sriracha and cilantro mayo, a tomato and baby spinach salad.

Enjoyed with a Jelly King dry hopped sour from Ontario's Bellwoods Brewery.

Ribollita, Stage II: Last night I completed the Ribollita I started a couple of days ago.  The flavor sure blossoms after an overnight stay in the fridge.  I'm not sure if I'd use rye bread again, although it wasn't objectionable, but in keeping with the nature of la cocina pobre, I used what was on hand.

Kimchi-Braised Short Ribs from Korean American by Eric Kim - really nice version of kimchi jjim with bone-in short ribs braised for a few hours in the oven with cabbage kimchi, onions, garlic, gochugaru, soy sauce, sugar, toasted sesame oil and water. Once the meat is shredded you serve it over pappardelle with parsley and parmesan

Individual steamed allium pudding...

The basic filling is leeks, shallots and onion. As a bit of an experiment I zhuzhed it up with caraway seeds, za'atar, and a splash of Worcestershire sauce...

Well I know that some people turn their nose up at the idea of canned peas, but it does make the dish for me.  I have to have canned

peas with hot chicken/turkey sandwiches.  It is tradition.
