Anova Precision Oven: Features, Accessories, Troubleshooting, and "Should I Buy One?"

I could always put it on the perforated pan they sell but, the crust wouldn't end up as I like it.  Hmm, maybe a Cordierite or Steel sheet would work to keep the crust crispy.

All the pans are smaller than the inside dimensions of the oven. Check out those Copper Diffusers!

Yep, they are 13" in diameter.  Sounds like I would have to chop the crust off a little to get it to fit the APO or perhaps let it thaw some to smoosh a little but, then it probably would not cook well directly on the rack since it would likely sag a bit under the racks wires.

FWIW, I have this pizza stone too. Pretty snug fit, they call it 15 x 12

Looks like there is a APO 2.0 coming: https://anovaculinary.com/products/anova-precision-oven

The folks over on /r/combisteamoven on Reddit seem to have dug up a draft manual and some other details. Other changes seem to include a redesigned water tank (with a second tank for waste water), and movable heating elements for cleaning.

Looks like it will have a touchscreen and a camera (similar to the June oven?) and probably a subscription-required app, though the latter is only to "access the latest guides, cooking modes, camera functionality, and recipes and to track your cook history on your oven." No idea if it's the same app / subscription as the sous vide wands.

Seems like the 1.0 is no longer available for sale, either.

@dtremit, please say v 2.0 has a self clean!

Sorry, this is from the Reddit linked manual

NOTES ON CLEANING

  • Make sure the Oven is completely cool before cleaning.
  • Clean the front of the Oven using a soft cloth with warm water and a mild cleaning agent.
  • To clean metal surfaces, use a stainless steel cleaner.
  • In case of scale build-up on the bottom of the interior, use a few drops of distilled vinegar mixed with warm water and a soft sponge to clean.
  • Clean the Oven interior after each use. Fat accumulation or other food remains may result in a fire.
  • Clean stubborn stains with an oven cleaner.
  • Do not use abrasive sponges or aggressive detergents. They can cause damage to the stainless-steel parts.
  • The top heating element can be rotated down for easier cleaning. Locate the clip in the center of the heating element and gently pull it forward to unhook. Rotate the element down. Once cleaned, rotate the element back up and press it into place until you hear a “snap” sound.ANOVA-AN950-10-2-0-Precision-Oven- (11)
  • The bottom heating element can also be rotated up for easy cleaning. Once cleaned, rotate the element back down until it is in contact with the bottom of the oven.

I wrote to Anova to ask them how to clean the inside window of the oven. They sent me back their standard blurb from the manual. I wrote back and said that I was specifically asking about the inside window, and "I know how to clean the rest of the oven, so you don't have to tell me again."

Their new reply:

"To answer your question, you can use a dishwasher tablet to rub on the stain and then wipe it off with a damp cloth. Alternatively, if it's easier for you, you can apply warm water to the area, rub the tablet, and then wipe it with a damp cloth."

Since I don't use dishwasher tablets, could someone explain what she's probably saying?

I should have left well enough alone.

In anticipation of a neighbour coming over to bake, a few days ago I cleaned the well-patinated (read grubby) glass door of my APO. Nothing unusual – BKF and a spray cleaner.

I then had only the wi-fi symbol (flashing) and the Start button lit. Interior light comes on but otherwise nothing.

First thought: that’s odd; maybe I’ve got moisture into something. Second thought: I’ll leave it a while. I unplugged it for a couple of days.

Today I plugged it in. Internal light still comes on if I open door but there are zero lights illuminated on handle.

Thoughts?

And at risk of raising two issues, I’m surprised no one has griped about Anova trying to impose subscriptions on its apps. A cash-grabbing betrayal of trust I think. Other views?

I don't know their plans for the oven but it seems they are disabling wifi and bluetooth on some older sous vide models and going to a required subscription on the rest. Well except for my non-wifi early model. Pretty ordinary. So there is no way I would buy anything Anova now.

@haresfur, Anova hasn't asked me for more money and I'm on my third APO. I did pay them to replace the cooking probe which I broke.

I use  the app on my phone to cook "Toast" in the Anova only; for everything else I use the front panel of the oven. I also use the app to run the Descale procedure a second time (with water only, to rinse it).

On occasion I have written to support@anovaculinary.com about issues with Oven.

I visit https://oven.anovaculinary.com/?query=reheat leftovers&page=1 to look up recipes.

That's it.

@FlashJack and @haresfur, can it be something you're doing that triggers Anova wanting you to pay?

My blexxed opinion only: If Anova wanted me to pay for a subscription for access to the "Toast" recipe, I would spend $100 on a manual toaster.

I don't know their plans for their oven but from the anova site, new users will have to pay a subscription to use their app. If you already have a subscription, you are grandfathered in. The app will not be able to communicate with a number of older models.

I haven't heard of any similar plans for the oven.

I let my APO boil dry during a 72 hour 100% steam sous vide cook.

Have I damaged the oven?

I doubt it. There’s a low water warning on the handle, I often run out of water and have to hit the button. Sometimes I have to unplug it too, wait five minutes and then plug it in again.

here’s a voodoo reset post from Reddit, I must have done this once

I think , for an oven , its over priced.

Anova is trying to market its circulator and now oven

as high tech computers .

they may have some of those components , but computers they are not.

for an oven , not adding an easy ' cleaning cycle '  to an offering , these days

( CSO's did that easily )

is one mighty mistake .

Anova's selling points , in their video , are tech features .

and that camera ?  really ?

Folks are still having problems with the first one.  It will be interesting to see if those have been fixed in the new one.  Right now, I wouldn't go near one with a ten foot pole, especially with all those new features - more things to go wrong.  I also think for that price they should have a self-cleaning feature.

For $1100 I'm getting a full-size LG with the 6.4ft^2 air frying oven and easy self-clean along with steam self-cleaning.  Sure, on a hot day it will heat the up the kitchen but, it also has a lot of nice features that will free up counter space for a ~$100 toaster oven that will work really well for small tasks like toast or reheating a slice of pizza or a piece of fried chicken from the fridge.

and Im sure Anova's business model will have a subscription model involved.

subscriptions are the new bank-rupter .

WSJ and NYT have articles from time to time

suggesting you review your 9.95 // month subscriptions

and decide if they are of real value to you or not .

its mostly ' not '

and the ideal business model makes it very difficult to ' un-subscribe '

Amazon Prime is a , well , prime example

they were in a bit of trouble for this .  maybe  not so much in the coming days.

I have free prime for 30 days .  A seems to offer this around BlackFriday

to get rid of more junk , and massage their Numbers for the Stock Crowd.

if its not straight forward to cancel on-line

I call.

no way will I pay twice for stuff.

Cake question:

I've baked cakes in my Anova with good results, but I've tried only one pan at a time.  Whether 9 inch or 10 inch I've had good results.  Has anyone tried baking two layers at the same time on separate racks, as one might in a conventional oven?  And how about cupcakes?
