Anova Precision Oven: Features, Accessories, Troubleshooting, and "Should I Buy One?"

Andrew Janjigian at Wordloaf is selling his (clean) Anova Precision Oven for something really cheap. See here.

 

Noteworthy because he says "As you may know, I’ve been developing recipes for and testing the Anova Precision Oven for the last few years, and have loved it. I use it for bread all the time, both for proofing and baking, with and without steam, and it works great. I also use it for sous vide, “air fryer,” and traditional cooking; it comes in handy when I need extra oven space or simply don’t want to fire up my main range for something small. (It’s great for reheating pizza, for example.)

 

"Anyway, Anova has a new version in the works; not a replacement for this one, but rather a Pro model, with a touchscreen and some updated design. I just got sent one to test out, and I need to make room for it, so I’m going to sell this one at a deep discount."

 

I can find NO information about the new model online. But I'm interested.

 

(Do you think it has a self-clean cycle 🤣 ? )

Given that the current Anova Steam Oven still has bugs (I've had two replacements under warranty - so far) and the internet is rife with complaints about this oven, I wouldn't touch the new "Pro' version with a 10 foot pole.

My experience has been different.  I'd be all over any new Anova oven if I weren't broke and not strong enough to lift it.

I should have left well enough alone.

In anticipation of a neighbour coming over to bake, a few days ago I cleaned the well-patinated (read grubby) glass door of my APO. Nothing unusual – BKF and a spray cleaner.

I then had only the wi-fi symbol (flashing) and the Start button lit. Interior light comes on but otherwise nothing.

First thought: that’s odd; maybe I’ve got moisture into something. Second thought: I’ll leave it a while. I unplugged it for a couple of days.

Today I plugged it in. Internal light still comes on if I open door but there are zero lights illuminated on handle.

Thoughts?

And at risk of raising two issues, I’m surprised no one has griped about Anova trying to impose subscriptions on its apps. A cash-grabbing betrayal of trust I think. Other views?

Odd on both issues.  I clean my Anova door with a ceramic scraper, maybe with a drop or two of Dawn dish detergent.  I'd say try a factory reset, although with no buttons to push that might be a problem.

 

Subscriptions?  No word on subscriptions here in North America.  I find the app adds a bit of value, but almost everything I want can be controlled directly from the front panel, assuming your front panel has working buttons.

That indeed is the problem. The buttons are completely dead although at first they were not. Given that the interior light comes on, I suspect it's a logic board issue.

 

My neighbour, a veteran of many hospitality setups, suggested a local repair wizard but I expect Anova makes parts hard to find and the whole thing is not worth the while.

 

I'll probably buy another APO because I don't know of alternatives that are as good. I love the humidity control and that it goes low enough for prooving dough.

 

Is there anything else worth investigating? Something longer lived?

@FlashJack, I would check with Anova <support@anovaculinary.com>. I was an early purchaser, so encountered some unusual problems; and Anova replaced the machine twice. Something wrong with the logic board doesn't sound like a user f*up.

 

As it happens I forgot to include all the parts in the return shipments, so I have 3 oven racks and 3 oven pans.

Will the APO hold a frozen 13" pizza?  Specifically, I'm thinking about DiGiorno, Freschetta, and similar options.  How about 13"x9" pans with handles?  MY BSO handles the common 13" frozen pizzas fine but, a 13"x9" pan is a tight fit so, no handles or it won't fit.

 

Any reason not to buy one today for $560?  I see some mixed reviews and wonder about the price versus a BSO.  This would be my primary "oven" until my house is built next year.  I think the steam feature might be something worthwhile if reliability is good.

The Anova interior is 16"x12.5".  The Anova has been my primary oven for years.

My anova oven is quite happy with this cheapie roasting pan, it’s 14 x 10.5

The listed 12.5" width is what has my curiosity up regarding whether a ~13" frozen pizza would fit like it does in my BSO.  I'm not into the cardboard crust smaller pizzas.

 

I typically put them directly on the wire grate for a nice crisp bottom crust.

Thanks to advice from @palo maybe, I have some copper diffusers from BellaCopper. 10" + two 6" fit very well under the  King Arthur Baguette Pan to provide especial heat. Would work perfectly well under pizza as well.

 

Sid, the APO is 16" wide, 12.4" deep. Is your pizza actually 13" in diameter?

Yep, they are 13" in diameter.  Sounds like I would have to chop the crust off a little to get it to fit the APO or perhaps let it thaw some to smoosh a little but, then it probably would not cook well directly on the rack since it would likely sag a bit under the racks wires.

 

I could always put it on the perforated pan they sell but, the crust wouldn't end up as I like it.  Hmm, maybe a Cordierite or Steel sheet would work to keep the crust crispy.
