I have not posted for a while. Have been very busy to upgrade my garden to deal with climate change. 

Made this:

Ordinary chicken schnitzel with nuked new potatoes and coleslaw salad. Pomegranate seeds added.

Ribollita: Today I started a ribollita. I made the minestrone, which is shown here. The ingredients include diced, smoked pancetta, diced leek, some fresh Calabrian pepper, likewise a serrano, carrot, celery, Yukon Gold potatoes, cannellini beans, some leftover savoy cabbage, a bunch each of cavolo nero and chard, including some of their diced stems, zucchini, a few crushed, whole peeled tomatoes along with their juice, and a few sprigs of rosemary.

 

When it cools, I'll layer the soup in a bowl with some stale rye bread leftover from another dish, and let it cool in the fridge to allow the flavors to meld overnight.

For CNY supper, we had a small AAA Prime Rib roast:

Last night we had leftover Buddha's Delight.

Tonight, we finished the rest of the prime rib.
Leftovers all gone; and it'll be a clean slate for February! The beef reheated well in gravy.
I LOVE rice and gravy!

Cuban inspired pork tacos from Lorena Garcia’s New Taco Classics - cubed pork tenderloin get marinated in a mix of garlic, oregano, thyme, olive oil, orange juice and zest as well as lemon juice and zest. After half a day the meat gets pan seared before quickly roasted and finally put under the broiler to brown. Served with lightly caramelized white onions (made with lime juice and white wine vinegar) and cilantro on corn tortillas

Another oven roasted panko coated haddock sandwich with baby spinach, tomato and a quick 'remoulade'.

Served with olives, cucumber and a blue cheese dipping sauce.
