sadly , no fresh green Poblanos in my easy to get to area.

 

Yes, roasted Poblano chiles over the gas flame on the cooktop, wrapped in a dishcloth to steam, and then the skin slips right off.

 

Sorry you don't have Poblanos nearby. We can usually get good ones at the international market down the street, but these Mrs. C picked up at a farm stand.

TJ's Palak Paneer with a Twist

A few days ago, I made a batch of chickpeas in the Instant Pot, used most in a dish I made for a neighbor, and was left with somewhat more than a cup that called to me from the back of the fridge, "Use me. NOW!"

 

I put the garbanzos into a small pot, added about a cup of frozen spinach, roughly mashed 'em up and added Smoked Piment d'Ville ground pepper, some thinly sliced and minced jalapeño that lives in the freezer waiting to be sliced and diced and added to various recipes, and a teaspoon+ of recenty made garlic-ginger paste. Meanwhile, the Palak Paneer was heating up in the microwave, and was then added to the ingredients in the pot, stirred, tasted, adjusted, and enjoyed for  quck and reasonably healthy lunch.

 

The mashed garanzos added an earthiness to the dish, the peppers a little heat and smokiness, and the rough mashed garbanzos and paneer cheese contributed texture.

Lunch today was sausages on the grill along with grilled eggplant, FM tomatoes and lovely lettuces.  
Dessert was an Almond Peach Raspberry cake with nectarine sorbet.

Egg salad "a la minute" on Dave's Killer Bread.  Crudités with house-made ranch dressing (mayo, sour cream, yogurt, lemon juice, buttermilk powder, garlic powder, onion powder, mustard powder, dried chives, fresh dill, fresh parsley, s & p).

 

I like to keep some ranch dressing along with a classic French vinaigrette in the fridge for quick salad dressing, crudité, etc.

Clean out the fridge lunch. No, literally - I emptied out both produce drawers and gave them a good scrubbing. :smile:

 

Seared shrimp, roasted Poblano chile, leftover corn, and a sauce of coconut milk, lemongrass, onion, garlic, serrano and bird chiles, curry powder, and fish sauce, finished with garam masala, Thai basil, cilantro, and scallions.

 

Clean produce drawers are drying on the counter . . .

A bowl of smokey, porky ramen for lunch: Finely diced smoked pancetta fried in the cooking pot with a dollop of ground Calabrian pepper packed in oil. Cooked in a chicken-pork stock, added smoked black pepper, topped with grated Pecorino Romano. Glass of hearty, room-temp black tea for the beverage.

Goats cheese with warm honey and balsamic vinegar for lunch. I didn’t have any bread to grill or toast but found some parathas in the freezer.

Gazpacho with shrimp and HB eggs made for a very substantial lunch!

 

Walnut torte with a chocolate icing and filling, brushed first with tart cherry molasses.
