I was cutting up some ham pieces for a ham and cheese omelette when I spied a half of an heirloom tomato from last nights dinner. I changed direction and made a caprese omelette with mozzarella and basil. Since the ham and cheese were already cat, I had them too. 
 

next time I’ll try salting the tomatoes early to reduce the water content.

Save the water that comes out of the salted tomatoes, it's a nice little kick to a stock.

Rather conventional breakfast items today. French toast sticks, sausage, yogurt and peaches (O’Henry, my fave) with a drizzle of vanilla bean-infused maple syrup.

The only twist was using a split-top brioche hot dog bun to make the French toast sticks, a trick I spotted online and a good way to address odd dog/bun ratios. I  tend to use sturdy, stale, sometimes VERY stale, bread that needs a good soak. This was rather the opposite and only needs a quick dunk rather than a soak but I’d do it again.

Wilted spinach, cilantro, and Thai basil pureed with half a jalapeno and a roasted chile Poblano and a splash of half-and-half. Sauteed sliced shallot, the other half of the jalapeno, and garlic, and then added the sauce, roasted chile Poblano strips, fried potato cubes, thyme, and Mexican oregano. Inspired by palak paneer, but with Mexican flavors. 😆

 

Topped with an over-not-so-easy egg and feta cheese

Savory Dutch baby with gochujang salmon from Everyday Korean.

One of several variations this book has for a one-egg, single-serving Dutch baby baked in a little 6-inch cast iron skillet.

Didn’t puff as much as last time but was still light and fluffy.

Everyday Korean has several Dutch baby options so I tried the kimchi and cheddar cheese version today.

It still didn’t climb up out of the pan as much as the first time I made it but it was tasty.

Not my typical- leftover biryani and egg.  A new Indian restaurant opened in town and we went there for lunch yesterday.  I know partner isn't a big fan so i tried to order what i thought he'd like.  A combo biryani, tandoori shrimp, papadum and chicken pakoda.  The biryani was not a hit so it became my breakfast today, and probably tomorrow too.

I planned to take a dough out of the fridge last night to bake early this morning, but then I saw the ham I bought the other day

and decided instead to make a ham dinner for breakfast.
Might as well do something when you get up early.
Put the ham in the oven just before 4AM.

Perfect looking Ham Dinner 

 

Ham requires either scalloped or au gratin potatoes ,and your version looks very tasty .
