Geitost from my recent trip to Norway.

It's not really a cheese, but whey from goatsmilk cooked down to a solid then slowly cooked further until it caramelises. The taste is a bit like fudge, but the lacto flavour is very strong. Deep, nutty, bitter notes, complex.

Green eggs and roasted Poblano chiles. Sauce was onion, garlic, jalapeno, cilantro, flat-leaf parsley, and spinach, cooked down and pureed with coconut milk. Solids were scrambled eggs and roasted/cubed chile Poblano.

 

Not everyone finds this color . . . appealing . . . but for me, it means flavors that I love. Also, we have way less stuff in the fridge. :smile:

I like it when we have no bread in the house and therefore no toast for breakfast which means I have to make pancakes. 
 

Grated cheese and avocado pancakes.

Same here. Only I love it especially because it's my husband who makes them and not me. I am far too fuzzy in the morning to actually cook anything. Which is why I eat toast for breakfast just about every day and rarely post in this thread.

Breakfast is most often is rolled oats eaten as a cold cereal with blueberries, diced strawberries, walnuts, dates and prunes covered with almond milk

 

Alternate breakfast is a lightly toasted bagel, cream cheese, capers, sliced tomato and nova lox’s

Leftover steelhead made into fishcake with potato, onion, peppers and herbs, wrapped with biscuit dough and baked.

Served with sriracha for dipping. Mixed blueberries and blackberries out of the photo.
