Why not indeed.  I would love that for breakfast. 

 

I didn't make the intended dinner last night so I made it this morning.

Down visiting @patris this weekend - for breakfast this morning she made cabbage and onion pancakes with cottage cheese and dill 

 

 

 

 

Please note - a black plastic spatula was used - and we are still alive!

The recipe calls them pancakes - sautéed onions and shredded cabbage, dill, cottage cheese, eggs, a bit of whole wheat flour. I think of a fritter as something deep fried, but these aren’t reminiscent of a regular American pancake in any way.
