your bagel creations always look delicious .

 

do  you cut the top half bagel before you slice into the rest of the creation ?

 

so as not to smoosh the result ?

 

don't suppose you have a video of ' how they eat '

 

in terms of Live  smooshishness ?

Unfortunately these are neither Montreal or New York style bagels but are what I call 'bagel shaped bread' so not a 'smoosh' problem'.

A breakfast I'll make 4 or 5 times a year.

Over easy egg, sauteed cremini mushrooms, beans, grilled half tomato, toasted WW English muffin, blood sausage, white sausage and chorizo (appr. 25 gm. of each) with a mandarin on the side.

As I had pomegranate seeds and juice left over from a lunch, I made these savoury pancakes. No recipe, which is often the way I like to cook. Anyway they were quite tasty with green onions and a sprinkle of Parmesan.

@C. sapidus I asked Google what the difference between shakshuka and huevos rancheros was and the following was one of the answers. Sounds about right. What do you think?

 

Shakshuka and huevos rancheros share similarities as both are egg-based dishes. However, shakshuka is characterized by poached eggs in a tomato and bell pepper sauce, while huevos rancheros features fried eggs served on tortillas and smothered with a tomato-chili sauce.

Yes, rancheros salsa is usually a cooked sauce of tomato, garlic, chile serrano, and white onion. Fry a corn tortilla fried until pliable, top with a fried egg, and then top that with the sauce. Finish with crumbled dry cheese, chopped cilantro, roasted chile Poblano strips, etc.

 

If you like chile-sauced egg dishes, Mexican cuisine has an abundance. Can you get Mexican dried chiles (ancho, guajillo, pasilla, chipotle, etc.) in Australia?

 

I have never made shakshuka, so I will trust the wisdom of the internet. :wink:

This is my Everyday Cornbread, based on a back-of-the-box recipe from Bob's Redmill and modified for my preferences. This is the cornbread I can make in my sleep using the countertop oven.

 

It is made with Bob's organic medium grind cornmeal soaked in buttermilk. The batter was made with lightly browned butter and a hint of black pepper was added. Also added was a small can of not-too-hot, well-drained, Trader Joe's Hatch chilies. It's been a while since I made this, and I'm pleased with the way it turned out. I'm enjoying it right now with a cup of Ethiopian coffee.

Lovely, as always. Where did you get those tomatoes, and how good are they? By now, the northern Minnesota farms are shut down for the winter. Grocery store tomatoes are hit and miss on quality.

This version had red curry paste enhanced with chiles and garlic mashed up in the mortar. Other ingredients included sliced shallots, black soy sauce, fish sauce, roasted chile paste, white pepper, cilantro, and lots of Thai basil.

 

Grapao in all its various transliterations means Thai (or holy) basil, so that is the key ingredient.

As part of my breakfast this morning, I enjoyed some homemade almond milk, made with the organic, raw almonds that arrived yesterday from Massa Organics (https://massaorganics.com/).  I've been making almond milk for years and always use raw, organic, almonds from either Massa or another local grower. There's a real flavor difference between them and roasted or cooked nuts, and the older nuts often found in supermarkets.

I usually sweeten the nut milk with one or two medjool dates, sometimes I'll add a couple-three drops of vanilla extract or a small piece of vanilla bean (my preference), and always include a very small amount of Diamond Crystal salt.

 

The almonds are soaked in filtered water for at least twelve hours. They are first rinsed well and then the water is changed at least once during the soak.  The almonds are then put into a high-powered blender and very cold water is added.  The percentage of almonds to water varies by my mood. Most of the time I use about 1.5 cups of dry almonds to about 3/4 of a liter of water. This morning I went a little thinner, using 1 cup of almonds to .8 liter of water.  The whole measuring thing is purely personal preference.

 

After whirring for about a minute on high, the mixture is strained through a nut bag.  I use Ellie's which is a very well-made and durable product. I've been using mine since 2016:

Just from the grocery store.  Tomatoes really are a hit and miss at this time of year, but I find that if I get what they list as field or beef steak tomatoes and leave them on 

the counter to ripen, they aren't bad.

Vacation breafast- tjs gf hamburger bun, egg, sausage, cheese.   Partner the same but with tjs gf everything bagel.

heehee - that pretty much what McDonalds offers as "egg mcmuffin with sausage"

A modified western sandwich, dubbed the 'east meets western' by @blue_dolphin, of egg, onion, ham, shishito and Thai peppers, green onion tops, Thai basil and cilantro on toasted sourdough.

A pretty typical Sat morning breakfast. A few field mushroom pieces, avocado on toast with a fried egg, small slice of Speck and a few pieces of homegrown tomatoes 🍅 Yay
