Chilled cucumber & corn soup with avocado toasts from Melissa Clark's Dinner. Cool and refreshing on a hot day like today.
My buttermilk was at that stage where it's probably OK for baking but I wasn't sure about drinking whole bowl so I used the suggested substitute of yogurt + milk with a mix of mint, parsley, basil and cilantro for the herbs. I wish I'd used more cilantro as I love it with cucumbers. Next time!
