Hey guys. Does anyone have access to their book right now? I'm thinking of making the coconut tea cake tonight and I'll need to pick up a few things on my way home. Does the recipe call for whole milk? Other than the coconut milk and the basics (like flour, sugar, butter, etc), are there any other ingredients?

Many of the recipes can be found online. I left my book in Canada, so online searching is the only way I can get most of the recipe!

The French yoghurt cake--can it be multiplied without any problems? I want to triple the recipe--if I do that, are there any modifications I need to make?

It's too hot to bake in Japan, so my goal is to make 3 cakes at once!

I've made the Granola Grabbers more than once, and they are excellent. I replaced the peanuts with pecans, since the granola I used had pecans in it. Hard to stop grabbing them.

I just returned from a wonderful cottage week on Georgian Bay in Ontario. Crystal clear water and gorgeous rocks - and, really, the first nice summer weather of the season. It's always a bit of a crap shoot in regards to kitchen equipment in a rental cottage so I load the car up with far more stuff than I think I could possibly use. I even packed in "the" book, as I think of it. This particular cottage, though great in every other way, was, to put it kindly, kitchen deficient.

I do like to inaugurate the corn season with Dorie's corniest corn muffins and, of course, there was no muffin pan and nor had I thought to bring one. I did bring a 9X2 baking pan though - so I made up the batter, poured it in and baked it for 25 minutes. It turned out fabulously. DH thought it was the best corn bread ever; and, I have to agree with him. I'll be making it like that in the future even if a muffin pan is

right at hand.

I have the burnt sugar ice cream base in my fridge and am planning to churn it tonight -- will report back! And I have made Dorie's marshmellow, but I didn't have great results -- I do better with non-egg-white marshmellows (I'm sure it's a character flaw of some kind).

I must have the same genetic flaw, because I too prefer my marshmallows without egg whites. I just like the way they taste better.

Burnt Sugar Ice Cream Report: Simply wonderful! Be sure to let the caramel cook long enough, and you will be rewarded with a completely tantalizing caramel ice cream. We ate it with sugared and toasted sliced almonds on top, and I'm tempted to mix them into the ice cream next time I make it.

Anyone know if I can easily double the Dimply Plum cake and use a 9x13 pan? I want to make it for tomorrow's luncheon at school, but the recipe as is will be too small. (I am also making the blueberry crumb bars from smittenkitchen.com)

I have never, ever baked a thing in my life but because of this thread I purchased Dorie's book and also Sherry Yard's "Secrets of Baking" which I have not looked at yet so cannot comment.

I have tried two things from Dorie's book. The peanut butter cookies and Applesauce spice bars. Both were a resounding success. I am now the hero of my senior's apt. bldg and suddenly have a lot of friends

Just an update. The World Peace cookies were also a success. It is just wonderful that a complete baking newbie could have all these first-time successes. A credit to a great, well tested cookbook.

One serious complaint about the Applesauce Spice Bars though. The book states they will last 3 days at room temperature. Hell, they never made it through the afternoon. Second time was as good as the first, so it was not a fluke. Hey Mom! I can bake

I'm putting together my baking artillery. In BFMHTY, Pyrex glass cake pans are the favored 'pan' for cakes.

Can anyone help me to find these? All I seem to get in my searches are used ones.

I have no round cake pans so I have the opportunity to get right the first time.

Does anyone have a recommendation for the ideal width of tart pans for the recipes in the book?

I just read in one of the other topics, how when you try a new recipe, it calls for a pot or pan which one does not quite have.

How true, I just bought a 10.25 tart pan and I think for recipes that call for a 9" , the extra 1.25" might really effect the outcome.

Now I'm looking for a 9" one, as I am buying new, want to get it a 9 incher exactly and all I seem to find, of the ones I want to purchase, are 9.5"

9.5" is not so far away from 10.25, LOL round and round we go !!!

Dark color makes for dark crust or regular tin, does it make a difference?

I am eager to start making these wonderful looking and sounding recipes!

Hi Aloha Steve,

It's great to hear about your successes and I love your enthusiasm.

About your batterie de cuisine. The Pyrex pans I use are the rectangular 7-x-11 and 9-x-13-inch pans and the round pie plate and deep-dish pie pans that are 9 inches in diameter. These are available through amazon.com and you should be able to find them in most kitchen shops. In fact, I bet you could find them in a supermarket.

As for the round cake pans, look for pans with 2-inch-high sides. I prefer light- rather than dark-metal cake pans and nonstick is nice, but not necessary. Pans with 2-inch high sides should be available at Sur la Table, Williams-Sonoma, Wilton or a good kitchenware shop.

As for the tart pans, a 9 1/2-inch diameter pan is fine. Tart pan sizes can be a little problemmatic because those that are made in Europe are slightly different than those made in America. You're right though, if you use a 10 1/2-inch pan, it will change the recipe's results -- but you'll be fine with a pan that's 9 to 9 1/2 inches.

We are in the 4th ARRA, usually don't make it past our 'market' street two blocks away. However, this time we are determined to broaden our travels for and about all things food. We are a 15 minute walk to E.DEHILLERIN, pass it every time we go to the Louvre but never stop in. This time we go inside !

I'm about to finish off the Cherry Fudge Brownie Torte but I had a question for anyone that's made it. For the mousse, do you not whip the heavy cream separately and fold it into the marscarpone/cream cheese mixture? The way the recipe is written it sounds like you just dump the heavy cream in, as is. That doesn't sound very "mousse-like" does it?

Also, I left out the pepper from the brownie. Has anyone tried it with the pepper? I just couldn't bring myself to put it in! I guess my palate has not matured enough to appreciate this combination...

I used about 1/2 the pepper. I was a chicken, too, and was making to take somewhere. I wish I hadn't been because they raved about it. I think I did whip the mascarpone and whipping cream together.

Last week I provided munchies for a group of fellow election campaign volunteers, and for something sweet made the "chewy, chunky blondies." They were perfect, a snap to make and so good. I didn't have the butterscotch chips on hand but otherwise followed the recipe. Enough chocolate for those who must have it, but lots of nuts and caramel-ly flavors from the brown sugar for others (like me) who OD easily on chocolate. The coconut was an inspired addition. This recipe deserves regular rotation for potlucks or family bbqs. With vanilla ice cream, I can imagine using this recipe as the basis for a great ice cream sandwich variation.
