Just about anything under the sun! Whole peppercorns are awesome also...I haven't gone down the smoked fruit road yet, but a friend of mine just did a fattie with smoked figs, said it was really good.

I have some nick thick pork chops that I am going to smoke, along with some pineapple and thought I would put a small pan of candied ginger in to see if it will absorb some smoke.

Hard boiled eggs to make the most awesome egg salad. I haven't gotten around to making a cold smoker so I hot smoke peeled HB eggs for about 20-30 minutes. The first time I tried it I cracked all the eggs but didn't shell them. Came out very pretty but I found the smoke taste too light. Hot smoking the peeled eggs does make the whites a little rubbery but I find the taste improvement worth it.

I just smoked strawberries in our smoker for 15 min then finished them in the oven. I blended them in a food processor added thyme and a squeeze of fresh lemon juice and honey. chopped up some fresh strawberries and sauteed them with some shallot and served with pan seared Columbia River Sturgeon. This stuff is amazing. Goes well with chicken, fish, or pork.

I'm smoking pineapple next. Serve it with some Hawaiian Ono.

Sounds like it would go with pork, maybe a pulled pork sandwich with a smoked apricot something or other. Maybe grilled pork tenderloin?
