Agree. It's been a bit tough these last few days working. I'm lucky I have AC in the kitchen but have preferred to BBQ most of the time.

What an eggxtraordinary mistake.

Smash Burgers for a Thursday night dinner. I ground some chuck steak, added S & P, a little rub mix, some fatty streaky bacon & finely chopped pickled green chili's. We are happy gently rubbing our food babies.

I try to brine chicken in particular all the time. Makes for moist meat. Especially if BBQing. The only real important factor is salt & water. Salt helps the water penetrate the meat, anything else is just value adding.

Some pork ribs on the way on my new Kamodo last weekend. sensational. Last night dinner. Sushi with Teriyaki Chicken and fresh Tuna.

Thank you, Only five of us for lunch this year. I always over do it and that pork leg was pickled then I hot smoked it.
