A very lazy mid week Thai green curry with chicken and rice. Also one of my favourite dishes. I had trouble uploading this pic the other day. That's the second time this has happened. ??

I've been wanting to get my BBq Spit out for months and I finally pulled my finger out. Pork leg served with home made dinner rolls, Broccoli, over cooked Pumpkin and potatoes. The potatoes are pouched in butter with garlic, thyme, rosemary and homemade chicken stock. I saw this method years ago, I'm sure there is a name for it but I don't know what it is. ?

I watched it the other night. I liked it but did expect more from the back ground story. Worth watching whilst I finished my bottle of wine.

I made some pork sausages last week and smoked them Easter Sunday along with way to much other food. Lucky for me I had leftover snags. So I fried up some bacon followed by onion, garlic, tomato paste, hot paprika, chili powder, cumin and a pinch of cayenne. Cook out the paste a little, add a can of crushed tomatoes, can of basked beans, can of three or four bean mix some Worcestershire sauce and Tabasco with chipotle. Leftover char grilled capsicums and my sausages. oh! and a couple of chili's from a jar. I'm very happy it matched my vision and taste. Served with a dollop of sour cream and a garnish of coriander. Also nice is it's a one pot wonder and the pot was scrapped clean by the family.

Yeh! someone else cooked dinner. My daughter number2's whip up this Tuna dish with rice. Another go to dish in this house. Simmer milk with onion, carrot, celery, garlic, pepper corns, bay leaf and a pinch of nutmeg for a white/ bechamel sauce. Add your tuna and corn etc. Sit in front of the TV and enjoy.

Minced beef & veg curry puffs... I really had no Idea what to do for dinner and this came to me as I rummaged around the freezer. Everyone was happy and it occurred to me that the someone could create a food van with just Puff Pastry recipes.

This doesn't have a name... It starts with a Mexican style rice then grilled kranksy and grilled veg. Real easy and real nice. Maybe someone can give it a name.
