I mentioned a similar to neice - but water chesnut goes inside date & then bacon wrapped. She said they do it with a chunk o pineapple inside.

One out of left field...

Talking on the phone to a friend while she was making dinner, and as part of the conversation I asked what she was making. "meatballs with ginger pineapple sauce".

Details are make and cook meatballs.

The a can of pineapple pieces plus some extra pineapple juice (and wait for it)..... 6 Ginger Nut biscuits

which actually dissolves in the pineapple and juice as it heats to form the sauce. Add the meatballs and a really quick and easy meal.

I haven't tried it but just might.

No.

Because of international differences, I put a link in to describe the biscuits. I wasn't sure if they were sold under the same name in other countries.

Haha great :)

Recently and coincidentally I was reading up on dried chili recipes and the idea of possibly mixing up pineapple juice with some of the dried chilies instead of citrus popped up.  I wish I had more time to play.

I've always loved fresh pineapple with chile powder and lime juice. Yesterday I tried out a new one on my granddaughters: sliced pineapple with cinnamon sugar and lime juice. They went crazy for it. I liked it too, a lot. Both ways were great alongside rice 'n' beans, which I made last night. These girls are also proud fans of pineapple on pizza. They will be four in June; blessed with youth they don't now how many people make fun of pineapple on pizza They are so stubborn  and very naughty. And hilarious.
