Coffee and vegetables

I have a hankering for something made with coffee and I can't find any vegetable-with-coffee suggestions on egullet.

 Googling brings up quite a number of vegetables that are glazed with coffee or otherwise have coffee in their preparation. Some even seem to be from reputable sources.

As soon as I saw the thread title, I was reminded that Daniel Patterson has a recipe for carrots slow roasted on a bed of coffee beans. Here's the basic technique. The full dish is in the Coi cookbook and can also be viewed at Serious Eats.
