Freezing Fresh Cheese

I imagine it would act like frozen tofu and release lots of moisture upon thawing - not necessarily bad depending on the application.

I can't speak to paneer, but our local goat cheese folks freeze their 3-ounce (maybe 4-ounce) tubs when the expiration date is approaching, then sell them for a greatly reduced price at a farmers market. It's absolutely fine.

Of course, you can freeze it but the taste might have changed when you thaw it. Depending on what type of cheese you are freezing it might become a bit dry
