Buttered basted eggs with pork belly and toasted baguette.

Breakfast tacos with shrimp, roasted chile Poblano, and creamy scrambled eggs. Seared the shrimp with sauteed onion, garlic, ginger, serrano chiles, and cilantro.

Avocado, kimchi, fried egg and a drizzle of kimchi mayo on toasted focaccia aka leftover pan pizza dough.

Sweet Italian sausage, heirloom tomato, and scrambled egg, with long red chiles, shallot, and garlic. The tomato was not yet ripe but cooked down nicely.

Cheesy polenta with curried onions from Mezcla by Ixta Belfrage with grilled asparagus. 

Per the recipe, the habanero went into the pan along with the onions as they caramelized and was to be discarded.  I didn’t eat it.  Yet.

Egg salad sandwich on homemade bread.

Hastily put together avocado on toast with slices of Camembert for breakfast

Gonna call this masala eggplant with chorizo and egg.

 

Saute onion, garlic, and chorizo. Toss eggplant with turmeric and cayenne and cook down. Season with a paste of long red and serrano chiles, cumin, clove, and black pepper. Finish with fish sauce and garam masala, and top with a fried egg. Flavorful!

Jambalaya fried rice with seared shrimp, kimchee, habanero and Fresno chiles, garlic, and a rare double-yolked egg.

 

Probably have something similar for dinner - Mrs. C made a lot of jambalaya (not that I'm complaining, mind you).

Kimchi dog: Aldi brat on a scallion pancake with sriracha mayo, kimchi and arugula

I was planning to make the egg sandwich on a scallion pancake aka the Double Awesome from Double Awesome Chinese Food. While listening to the local news, I heard that today is National Hot Dog Day, then I turned the page in the cookbook to find this kimchi dog.  The rest was breakfast!

Chorizo, cabbage, and egg, flavored with "super spicy" kimchee, ginger, garlic, fish sauce, turmeric, and a habanero, then mellowed somewhat with heavy cream.
