I've missed the writing of @russ parsons in the LA Times since he departed that publication so I was delighted to read this article from him in The Irish Times: A US food writer moved to Ireland. Here’s what he found

Brought me back to my first trip to Ireland.  I was not expecting great food and then I discovered Irish butter ... and cheese and bacon and salmon and potatoes ... simple ingredients with real flavor.

Thanks for the link. Ireland has wonderful food. I spent a lot of time there 40 years ago and still miss it a lot. I don't know the writer but I'll be reading the article in a minute!
