There is a myriad of information on smoking meat on e-gullet. All of it in various places, requiring a ton of searching. As the weather warms up, and I have all of these pork shoulders, and could use a good excuse to stand outside and drink beer and "be productive," I got thinking.

There are several Smoking Dieties on e-gullet.

Wouldn't a "Smoking Primer" be a wonderful thing? Advice on smokers, how to make do with the grill one might have; wood/charcoal; cuts of meat and preparing them (brining, rubbing); the science of just when meat quits absorbing the smoke; temperatures; sausages (mixture, stuffing, smoking), etc., etc.? Keep Jason happy and address bacon.

This could also make a nice TDG feature.

I throw my support behind this idea.

I vote klink should compose it. If he lacks the time to dedicate to such a project, I have his address. It'll be handled appropriately. ;)

Mon colonel, this is of the utmost urgency. Your people need you.

I tried to gather stuff in one place -- here.

There's also some stuff here.

There's also a ton of non-eGullet information (with great instructions, pictures, recipes, etc.) -- here.

There are two gods here -- Col. and =Mark. And a Godess or two.

Forgive for leaving the Egullet realm, but I was a subscriber to several BBQ mailing lists for years. A while back it was felt that collecting the diverse knowledge about BBQ that was represented on these lists would be a good thing. Rather than reinventing the wheel (I've never understand why folks are so against reinventing wheels; if it had not happened we'd still be riding around on stone wheels), I'd suggest checking out the Official BBQ Porch BBQ FAQ.
