Desk breakfast...Whole Foods protein waffles, mashed up 1/2 a banana and mixed in a bit of almond butter and cinnamon to use as a topping.

Bricklayer's eggs with green beans: Ancho and guajillo chiles, toasted, soaked, and blended with white onion, garlic, and a little honey. Sauteed the green beans, fried the sauce, and then folded in the eggs and feta cheese. Topped with more white onion.

 

One of my absolute favorite breakfasts, based on a Diana Kennedy recipe.

Some of the breakfasts over the last week. Beans, fishcake and an egg with tomatoes and a WW bagel. Traditional salt cod fishcake, 50% potato, with non-traditional egg with Thai chilis.

Two egg omelet with a chard, zucchini, mushroom and feta filling.

Breakfast wrap of egg, shrimp, zucchini flowers, Thai and shishito chilis, pepper jack, chives, cilantro and Thai basil with tomatoes and freezer fruit.

Homemade banana bread, included some flax and chia seeds in the batter, and used half Allulose/half sugar. The bananas weren't quite over-ripe enough, which affected the flavor, but it is still tasty.

Shakshuka with a finish of zucchini flowers, cilantro and chives.

This was my first cooking trial using the Carolina Reaper peppers I grew. I usually use 2-3 Thai chilis or a half to a whole Habanero for a single serving of the shakshuka base. I used a piece of Reaper, sans seeds and ribs, around 1 square cm. for a double batch. Sinus clearing but didn't overpower the other ingredients. Served with focaccia 'soldiers' and iced tea.

Weekend breakfast, almost a FEB ( full English breakfast ) but not quite there. Heinz beans included in breakfast are good.

I have never had what I think of as American biscuits and I must say, these look absolutely delicious and have me wanting to make them.
