Hi, I've got some rocket to use up and decided to make soup out of it, but I don't want it to be all rocket - what other veg would go well with it?

You can add it as a last minute addition into many soups, just long enough to wilt. I usually do the same with spinach.

Not a veg, but it'd be great added to a bean soup. In fact, I'm making one this evening, with RG Marcella beans, onion, carrot, celery, potato, spinach, g-f pasta elbows, and a smidge of kielbasa.

Yes as noted - great as an add-in.  But if you were going to make it thefocus like in a pureed green soup - I;d taste to see how pepery it is, simmer some potato in water or stock, enrich with cream if desired. A simple green Spring tonic if you will. Arugula has a lot in common with watercress so modeling after Julia Child's works. http://recipe-finder.com/recipe/16881512352129610333

Why not make a pesto out of it???
