I guess u might look into Mustard Base sauces,  on the web.  ?

 

Typically to balance any sauce, some souirce of sweetness helps.  But it doesnt need to be in the form of sugar.

 

I would look at making your own.   Smokey..you can add chipotle peppers and blend

Im not adverse to using a drop or three of Liquid Smoke.

 

after you assemble your dry ( non-sugar )

 

try adding a little Pickle Juice , from a Half sour  jar.

 

Ive done this in the past and it worked well.

A good grilling sauce is simply oil, vinegar, and spices/peppers to your taste. If you want smokey, chipotle or pimenton or ancho  or a combination of all of them should give you what you want. I always find it good to add a little cumin to that spice mix.
